    This recipe is from emilybites.com. they look totally adaptable for a mini muffin pan. I am going to try them without the crackers, I think they will hold together just fine. The nutritional values posted are for a regularsized muffin tin. My mini tin yeilds about 1 oz of protien.     I tried something interesting that tasted very good today. I normally buy plain greek yogurt and put in a little vanilla and splenda to sweeten it (I can't for the life of me find greek yogurt without sugar sweetner). I dumped a little cinnamon in there this time along with the usual vanilla and splenda. It tastes awesome! I'm surprised the yogurt makers don't have this as an offering. It rocks!

    I made a recipe the other day that I found on the internet somewhere but can't find again. But here's what I did: You take 1/2 cup or low-fat bisquick, 1/2 cup low fat milk and 2 eggs. Mix and put a tablespoon into each cup of a greased muffin tin, top it with 1/4 cup of filling of your choice and then top with another tablespoon of batter. For the filling I took about a tablespoon of Smart Blend butter, added a couple of tablespoons of soy flour and then a cup of skim milk and let it thicken up a bit.     Here is a modification I made to the cheese crisp recipe that has been posted on here before to make a buffalo chicken cheese crisp. preheat oven to 350. In blender or food processor place 1/4 cup of shredded cheese(used cheddar, but Mexican blend would probably be better), 2 oz of canned chicken breast drained, and hot sauce to taste. Blend until it is a fine powdery consistency. on a nonstick baking sheet spoon the mixture into small circles about the size of a potato chip I was able to make 11 of them. Place in oven for 10 minutes or until they appear properly done. Take off pan and let cool. Enjoy. Calories 160 carbohydrates 5 Fat 9 Protein 15

    Hi, I found a pin on pinterest yesterday that lead to a blog with a faux pizza crust using ground cauliflower and a few other ingredients!     I love finding healthy ways to prepare my old (...okay, STILL) favorite comfort foods. So I'm hoping maybe we can post some of our favorite tips here for each other, like... Replace shells, tortillas, sandwich bread, with huge, crisp green lettuce leafs. I swear, it really makes me realize how often bread was just in the mix to CONTAIN things. Saves calories and carbs And I haven't done this once where using lettuce instead of bread/shells/tortillas made the food any less delicious.

    I posted a brownie recipe blindly a week or so ago, but when I made them they were awful. So I went looking for another and made these today. They are awesome. Fudgy, chewy, and If you didn't tell anyone they would never know they were low carb. I will say if your not a fan of flax seed meal you can use almond meal instead. The flaxseed does taste kind of like grass by itself but in the final product you can absolutely not taste it. My only gripe is the seeds in the brand I bought were not ground as fine as I would prefer. Easy fix just run through a food processor, or coffee/pepper grinder.     okay I needed a change today so I made Quesadillas for lunch. If you have half of one it is 125 calories, 8 gr Protein and 10 gr carbs (3 if you count net carbs, because I used low carb tortillas that had 15 gr Fiber each) 1 Carb Balance Flour Tortilla 1/4 cup Mexican Blend cheese 2 1/2 slices of Canadian Bacon I put the cheese and bacon on one side of the tortilla and folded it over. then I cooked on a small skillet sprayed with Pam over medium heat and flipped over after about 3 minutes. cook until cheese is melted inside. Then I cut it into 4 small pieces and ate 2 of them for lunch. You could also eat with 2 tablespoons of salsa or sour cream.

The crust tastes like real bread crust!! 3 eggs separated 1/2 tsp cream of tarter 1/2 cup of unflavored whey Protein powder 3 oz cream cheese ( I used the fat free) Spices ( I forgot to add some and it was still good) Pre heat oven to 375.     Im going to share something I discovered, which you may not know if you don't have children. I've read several people on here in the soft/liquid/puree phases who miss texture and crunch. In the baby section there is something called "yogurt bites" basically its little wafers of freeze dried yogurt. They are crunchy BUT dissolve on your tongue and melt. So, it may help satisfy that need for something crunchy. They taste YUMMY by the way. Also would be good for those further along who just want a healthy crunchy snack. 1/4 a cup is only 30 calories!

    I know other people have posted quiche recipes but I just made these and they are so delicious!!! Ingredients Egg Bacon Spring onion cheese Frozen puff pastry squares Salt Method 1. Pre heat oven to 160 Celsius 2. Spray muffin tray with oil 3. Cut circles out of the pastry and put in muffin tray holes 4. Cook bacon in frying pan 5.Mix all ingredients together 6. Spoon mixture into muffin tray, I filled up the pastry cups all the way but as you'll see from the pic they did rise a bit. 7.     Spices make food go from bland to yummy!!! What's your favorite spice and how do you use it? My personal favorite is Mccormick Monterey Steak Seasoning. It's coarse garlic and pepper. My favorite way to use it is on green Beans. I put frozen green beans in a Corningware dish with a lid or a steamer bag. I sprinkle the seasoning on top. I microwave the green beans for about ten minutes. They are SOOOOOO GOOD! My kids even love them.

    Okay if you plan on watching the Super Bowl at home or going to a party, let's hear what you plan to eat and still stay on track. If you are looking for a zero carb chip for your dip, I microwaved about an ounce of sharp cheddar cheese for 30 seconds on a coated paper plate. then I peeled it off and it was nice and crispy. Be sure it's not fat free or low fat cheese or it may not work as well. Great when you want some kind of crunchy snack.

    Hey guys... I hope everyone is fabulous and happy in their journey. Anyway let me start by saying that right after surgery I cant tolerate protein shakes. With that being said, I found a great product at my grocery store that I use to get a quick low calorie low card high protein snack in. The product Im referring to is HOOD milk. I can usually find it at stop and shop or Pathmark. Here is a lil quick recipe that I use to help me get up to 16grams of protein in one shot.
