Cauliflower pizza ingredients 1 cup cauliflower, grated 1/2 cup shredded light mozarella cheese 1 egg 1 tsp oregano 2 tsp basil 2 tsp parsley 1/2 tsp fennel 1 green pepper 1 onion 1 tomato Garlic powder, to taste Directions Chop pepper, onion and tomato. Italian food had always been a fave and my all time fave is lasagna. I have been very good not to eat too many carbs, but more than that had heard horror stories from ppl who ate Pasta and were in pain. Well, today I had a lovely lasagna. Instead of using lasagna noodles, I used Won Ton wrappers. Like pasta, they are a flour based noodle. Because they are so thin, though, you don't get a huge ball of pasta in your belly. Also, because they are so thin, you don't have to precook them. It's great because you still get the texture you love, and the ability to stack, without carb overload. I am not the type that can happily make two or three different dinners for each picky taste in the house and I have been in a quandary trying to figure out how to feed someone whose four food groups are potato chips, donuts, cookies, and sometimes what the wife cooks. He does not do veggies unless you count potatoes and corn with an occasional rice dish thrown in. And ramen noodles. He does not take kindly to the sneaking veggies in every day dishes thing. I tried these receipes this past weekend and they were yummy to my tummy. Great alternative from eating regular pizza. Cauliflower Pizza 1 cup cooked or uncooked, riced cauliflower* 1 egg 1 cup mozzarella cheese 1/2 tsp fennel 1 tsp oregano 2 tsp parsley Preheat oven to 450 degrees Farenheit. Spray a cookie sheet with non-stick spray. In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley. It also seems to work out every time I make it, which can't be said for some of the other recipes I've tried. This is so simple I'm almost embarrassed to post it, but it was a big help to me during my low carb preop diet. I plan to try it again soon now that I can tolerate more foods in my postop diet. All you need is the boxed "Steak Um" frozen beef slices (in the frozen meats sections) and some string cheese. I used the pepperjack cheese. You can use any cut of cheese but the string slices seemed to just fit right in. Fry one serving of the steak um patty in a pan. They cook really fast so stand there with it while it cooks. This is what I make to get my chicken wing "fix". I am sure there are other recipes out there like this (it is so simple), but I just threw it together for lunch: 3 oz rotisserie chicken breast (no skin) 3/4 T low fat mayo Franks wing sauce finely minced celery 1/2 T finely crumbled gorgonzola or blue cheese Shred chicken and sprinkle on the wing sauce (take it easy on your tummy until you know how she will handle the hot stuff). So I just bought some xanthan gum, a low carb thickener. I had to buy an 8oz package which is, as far as I can tell, a lifetime supply. The only trick to using it is that you must use a blender to mix it with the liquid or it won't blend. You will get nasty slimy lumps of xanthan in your beverage if you don't use a blender. I also think it mixes better with cold liquids. 1/8 t is enough to thicken 8oz of liquid. ok..I live alone (well..me and the three Bichons) How many of you are cooking for one? Do you cook a meal for your family and then something different for you? (ie, lower cal, less carbs, low fat, high Protein etc). Simple meal I love, now that I am at 2 mos and can eat regular food: One 3 oz talapia fillet 2 tbls corn, I cut right from a fresh cob, I keep on my counter, cause I use it every day. 1 tbl onion or other favorite veggie. Baking is a passion but I like "real" food (LOL) to be simple to prepare. You can get snack size cups of pineapple tidbits in it's own juice in the grocery store (4 to a pack). If you mix one of these with 2 tablespoons of sweet n sour chinese sauce and add some peppers (or whatever else you like) you can use it to create Hawaiian chicken, shrimp, beef, etc. The extra keeps in the fridge for a week. It's also a great marinade. An easy dessert is to take the 60 calorie fat-free jello pudding cups and freeze them. They taste like ice-cream and take longer to eat. Grapes are also good frozen.
