Baking is a passion but I like "real" food (LOL) to be simple to prepare. You can get snack size cups of pineapple tidbits in it's own juice in the grocery store (4 to a pack). If you mix one of these with 2 tablespoons of sweet n sour chinese sauce and add some peppers (or whatever else you like) you can use it to create Hawaiian chicken, shrimp, beef, etc. The extra keeps in the fridge for a week. It's also a great marinade.
An easy dessert is to take the 60 calorie fat-free jello pudding cups and freeze them. They taste like ice-cream and take longer to eat. Grapes are also good frozen.
