  1. Started by myrori,

I had a tomato I need to use up but I was really sick of eating them raw so I go creative and sliced them up, coated them with garlic and olive oil then topped them with Parmesan cheese. Through them on the grill until the cheese was melted, They were AWESOME!

I made this for my mother. chicken in garlic lime saurce. Take 4 chicken breasts.....cut them in half. Salt them, then use fresh ground pepper. Then take a large ziploc bag and pour all purpose flour in it. Take the chicken breast pieces and put them in the bag and do the shake and bake style of mixing. then get yourself ready made cloves of garlic, get about 2 heads of garlic worth....dice them up,then take about a cup worth of butter. I bought a bag of Baken-ets pork skins today at the grocery store. I've never had them before and was expecting more flavor. I started looking around for ways to make them tastier on the web and found this recipe on the "low carb friends.com" forums. It looks interesting, I may just try it! Pork Rind French Toast 1/2 of a 3-oz. bag of unflavored pork rinds 2 eggs 1/4 cup heavy cream 3 packets Splenda 1/2 teaspoon cinnamon 1/2 teaspoon egg nog extract or vanilla extract Crumble pork rinds up until they resemble fine bread crumbs (use your food processor if you like — or put them in a Ziploc bag, air removed, and roll them with a rolling pin.) Set aside. …

I tried this basic recipe tonight: http://www.genaw.com/lowcarb/parmesan_chicken.html I used less chicken, and I pounded it thin, but the basic recipe works well! Also, I tried to just bake the coated chicken rather than frying it, and I liked how this turned out. Pretty yummy!!

This recipe was born from my desperation for something like fried chicken on my low carb diet. I will write down the directions for both fried and baked chicken thighs. The only problem with this recipe for me is that is super duper high in sodium, so please be aware if the scale doesn't move in the morning it is probably because of the Water retention, lol. 1 and 1/2 bags of pork rinds (I used Kroger brand) 3 large eggs 4 tbsp italian seasoning 2 tbsp garlic powder 48 oz (3 lbs) of chicken thighs (I prefer dark meat) For frying: 24 oz (2 cups) of peanut oil for pan fry 1) Crush the pork rinds to a fine consistency by adding the pork rinds to a sealable plastic …

Heat if desired (but not over 130 degrees otherwise the Protein Powder denatures). It’s only 2.9 ounces and has 0 fat, only 100 calories, 0 carb, 0 sugar and 25g of protein! It also has 100% of daily value of Vitamin C and lots of other Vitamins in it. I am just curious if anyone has tried this or heard anything about it from their doctors? I thought I would mention that I found this cookbook/eating plan called 'Eating for Life' by Bill Phillips. The book talks about the importance of eating 6 time a day... high protein & healthy carb. Exactly like what we are supposed to be doing. He has a lot of really good recipes, including desert ideas (sugar free pudding with a couple of scoops of protein powder). I thought I would pass along the info since it seems more fitting that a lot of the bariatric surgery cookbooks I've looked at. You may want to see if your library has it available.

So I was at the grocery yesterday and saw some cheese crisps in the deli section. It reminded me of a treat I used to enjoy a long time ago, and I realized they were almost zero-carb and crunchy with some protein--perfect! So I got some cheddar and some parmesan and grated them fine in the processor, almost to crumbs/powder consistency; I used about 1 oz of the cheddar and a couple of spoons of the pre-grated parmesan and ended up with around 1/2 c. of finely grated cheese. I used the cheddar to mitigate some of the high sodium of the parmesan, but you can really use any type of grating cheese. Preheat the oven to 350. Put a Silpat on your cookie sheet and put littl…

Ok so I was browsing The World According to Eggface and I came across her "Master List" of wraps, using low carb whole wheat tortillas. Being an on-the-go person, I am always lugging little containers of healthy goodness everywhere with me, and I can appreciate the simplicity and convenience of a wrap. Even though I have sworn off carbs for now, I think I ill make an exception for the tortillas mentioned here - 80cals/12 g carbs/2 g Protein. (They are more like soft taco size Im assuming) I think that one of these puppies with some turkey, cheese and veggie inside would probably last 2 meals with me.
