My Nutritionist said that it would be a good idea to cook individual meals in something like a mini crock-pot especially when it comes to making your meat as soft and tender as possible. I think this is a good idea since I will be mainly cooking for myself once I get sleeved in January. So my question is this: Does anyone have any recipes for cooking with a mini crock-pot or even any great recipes that can become "mini-sized"? I LOVE chicken, so don't hesitate to throw that in the mix. All suggestions are greatly appreciated!

I made this in the crockpot this evening and it was a hit with me and my six year old! The house smelled SO good when we got home. I used 20 ounces of chicken breast instead of the drumsticks/thighs in the recipe, and used 1 cup of matchstick carrots instead of the regular carrots sliced (on hand). Served without the rice of course. I estimate this makes about 8 servings at just under 3 ounces a serving. Using MFP to calculate, per serving 117 calories, 9 carbs, 1 gram fat and 17 grams of Protein. Hi, im TJ. Im a workaholic. Im also 3 months out of surgery. I generally don't have a lot of time to cook - I work between 60-70 hours a week, sometimes 6-7 days a week. The bright side to this is that my cafeteria has an amazing a la carte salad bar. Does anyone know if Atkins baking mix and Carbquik are interchangeable in recipes? I recently went to a health food store and found both but opted to go with Atkins because it had Protein. Now a lot more of the recipes I find use Carbquik instead. I could easily go buy it but I don't want my Atkins stuff to go to waste. All I've used it for is pancakes so far. I've googled and can't find many recipes when I feel like I saw plenty before and never saved them. So does anyone have any recipes using Atkins baking mix? Ham egg cups: To assemble, grab a cupcake/muffin pan and place a thin slice of ham or turkey in each space. Sprinkle finely chopped red and green peppers at the bottom. I found this recipe & thought I wld share. chicken breast, haves & pounded thin 3oz fat free cream cheese 3/4 C cheese (I wld use weight watchers or cobot 75% reduced fat cheese) 4oz green chillies 1/2 tsp chilli powder 1 can cream of mushroom (98% fat free) 1/2 C. OK, so I have seen commercials lately for mayo and it is all about a BLT. I love BLT's, but rarely eat them. I eat a lot of lettuce wraps, and decided, hey, wouldn't that make a great BLT. So I got a piece of iceberg lettuce, diced some tomatoes, spread a little low cal miracle whip on the lettuce and added 4 slices of bacon, and, TA-DA a BLT. All the taste without the bread. I cook my bacon in the oven on racks so the fat drips off and then drain on paper towel. One slice of bacon has 42 calories, 3 g of fat and 3 g a Protein. PS, I am 20 months post op, not for the newly sleeved and not something to eat everyday, but boy oh boy, did it hit the spot!

I'd posted previously about my love of flatout bread. Last night I cut one in half and made buffalo chicken on one half (wing sauce, canned chicken, cheddar cheese, sprinkling of ranch dressing packet) and sausage/pepp on the other (prego pre made pizza sauce, leftover sausage, turkey pepperoni, and four cheese pizza blend). ok, so, I had some boneless skinless breast tenderloins that, in the past, would be fried in oil or butter. I had a hankering for that and after a few days of thought, this is what I came up with. Have a recipe for the best pork hops. After my surgery I couldn't eat a lot of meat but now I can a little and this is the best way to eat. Pork hop I have found. 1 packet of dry Ranch Seasoning 2cans Cream of chicken Soup 4 pork chops 1 can of Water Sprinkle each pork hop on both sides with ranch dressing seasoning and place in crockpot. After all 4 large chops or several thin Breakfast chops are placed in the crockpot, add both cans of cream of chicken soup, And 1 can of water and cook on high for 5 nhours. I took pounded thin pork chops and seasoned them with cumin, Mexican oregano, salt, pepper, garlic granules and awarded them off in a little extra virgin olive oil. I topped it with tostitos salsa and Mexican blend low fat cheese and browned it under the broiler.
