  1. Made this today, thought I would share! You can add in other goodies as your diet allows - I would like to try it with different veggie/cheese combinations! Mini crustless quiche makes: 4 servings ingredients: 4 slices of prosciutto, very thinly sliced! 4 eggs, beaten 1/4 cup low-fat ricotta cheese 1 slice american cheese (2% or skim milk cheese would be best) 1 tbsp shredded parmesan cheese salt and pepper to taste (I also put in a bit of garlic powder - optional) *note: prosciutto is very salty on its own and you do not need much added salt in this recipe.     I see so many people enjoying chili during the puréed phase and I'm going to be there next week and I LOVE chili so I'm thinking this would be great for me. Are there any certain kinds of chili people buy or are you all just making homemade? I typically make homemade but I don't know how healthy it is, ground beef, 3 kinds of Beans with chili sauce, some tomatoes, some chili seasonings and basically that's it. Just wondering if I should whip up my own chili from scratch or if there are canned (eek scary to me) chili that doesn't taste like dog food!!!!     Since I can't eat alot at dinner, I always have half of my pork chop left over. So I eat it the next morning diced up in a scrambled egg. So good! Just an idea for something different. Also, I made a pot roast in the crock pot yesterday. The kind that shreds really good. I mixed the leftovers with the mild taco seasoning and made tacos for my husband. I put some in the wonton wrappers with shredded cheese and refried beans and a little taco sauce in the muffin pans and baked 375 for 10 minutes! Who needs big taco shells! YUM!

    So i used to be obsessed with beef stroganoff hamburger helper so i was playing around and found a decent replacement! take 1 lb of 90% lean ground beef and brown it. add 1 cup of peas and 1/2 a bag of baby spinach and sautee it until spinach is cooked. then mix 98% fat free cream of mushroom Soup w/ 1/4 cup of skim milk and mix until thinned. Add the soup to the other ingredients and simmer together for about 5 minutes. Remove from heat and let it thicken and it tastes amazing! it's all the tastes of hamburger helper with minimal fat and no pasta! you can season to taste

    Interesting and surprising find. HEB Tuna Delights Premium Chunk Light Tuna Patty Lightly Sprinkled With Cracked Black Pepper browned in olive oil for 2 min per side. Topped with 1/8 cup low moisture mozzarella. Garnished with lemon and cocktail sauce. 21 grams protein. 191 calories. I was able to eat the whole thing. It's not very big, but packs the protein!! As I watched my 4 year old eat hummus, I came up with this recipe idea to make a Greek twist on a pizza. Take either whole wheat pita rounds (you probably could split a pita and use each half to make a thinner crust) or even a low carb tortilla. Good stuff, healthy etc. Apple Mango salad (modified slightly, my original recipe feeds 25) 2 mangos peeled cored and sliced. 2 Granny Smith apples peel on, cored and sliced zest of 1 lime juice of one lime Stevia Slice the fruit, pour the lime juice over it set aside (or cover and put in the cooler to get cold) Put the lime zest and as much Stevia (or sugar if you want to) in a food processor and pulse until the zest is fully incorporated into the sugar.
