  2. Pasta is back on the menu! My husband wanted pasta and meatballs the other day, and I wanted more than just the meatballs. I found a package of high-protein/low-carb penne that fit the bill perfectly. This pasta is available as spaghetti, macaroni and more, and even though it's more expensive than regular pasta, you can't eat much when you're sleeved so it evens out. I've begun to use this now for tuna salad, macaroni and cheese, egg salad, etc. The recipe below is one my husband and I both enjoyed. So I am trying to eat small portions of sensible food, but not deprive myself. This fits in really well with the fact that I LOVE to cook and also that I cook for my fiancee, who loves to eat! I love bacon wrapped shrimp, it's so easy to do on the George Foreman Grill cuz the shrimp is already cooked, so it just takes a few mins on the grill to heat and cook the bacon, and I can cook just a few at a time. It doesn't take many to fill me up! I dip it in this creole mustard recipe I got out of a magazine. I modified it and use greek yogurt for the sour cream, and the splenda/brown sugar mix instead of just brown sugar. And onion powder for the minced onion.     I found a recipe online for some mock cheesecake and OMG is it good. I used strawberry Jello but you can use any flavor you want. Hope y'all enjoy!! 2c fat free cottage cheese 1 small box of sugar free jello 1/2c boiling Water Mix Gelatin with boiling water until dissolved.     I just made Burbon chicken. It is wonderful. I wanted to try this receipe however it was carb loaded for my taste. So I subsituted the brown sugar with splenda brown sugar and omited the apple juice. Not sure how much the carbs were lowered. By using the receipe the way it is the carb count is 23.4 grams. So I figured what the hay, and give it a shot. Also I used the low sodium soy sauce. (no rice or noodles. I did use green pepper, mushrooms, celery, onion and broccoli.     Ok, I'll admit this adds up to enough carbs (with syrup) to be limited to an occasional treat, but the Big Train buttermilk pancake mix is really fabulous! It actually tastes like REAL pancakes, and is very satisfying - I'm 4.5 months out and could eat only half a serving. Definitely worth a try if you find yourself longing for a pancake fix. My husband thought they were good too, and he doesn't low carb! 1 serving has 190 calories, 7 net carbs (12 total, 5 fiber) and 11 grams protein.

    Took an old recipe for snack pecans and did it sugar free. Mix together 2 egg whites 2 cups pecans 1 Tablespoon cinnamon 1 Tablespoon salt 1 cup Powdered Splenda (I used the one in big bag) bake 350 20-30 min (I used aluminum foil sprayed with pam so it came off easy) until dry and crunchy. Not sure of stats....but yummy and has protein! I forgot to put - make sure you include the egg whites....they kind of "bake" the pecans together like a praline (minus the sugar...hahaha)

    So today, I was able to start on canned chicken, tuna, baked fis etc. My surgeons office suggested that I mix it with some sort of dressing to cut the dryness and help it go down easier. Well, I don't care for Miracle Whip or Mayo, so I cam up with another solution ... I took about 2 oz. canned chicken breast (Swanson's) and mixed it with 1 tbsp of the Frank's Red Hot Wing sauce. I got my Protein, my low carbs, and my Buffalo Sauce fix all at once. I ate about an ounce of it and was stuffed. Nutrional Info as made: 65 cal, 1 gr. fat, 1 gr. carb, and 12g protein. Not much of a recipe, but it sure beats mushies!!!! -Pete

    I made a roasted cauliflower Soup for my pre-op full liquid diet, although some might think it is more appropriate for another stage. Thinly slice a head of cauliflower into lacy fan like pieces. Some will be large and some will be small. Toss in a small amount of olive oil and spread out on a cookie sheet. (A large head might require two cookie sheets. Cauliflower will shrink SIGNIFICANTLY as it roasts, so if you season it ahead of time, it might end up being too highly seasoned after shrinkage.)
