Muffin Meals?

Recommended Posts

Sorry-Not so much a recipe as a request for recipes.< /p>

A while back-of course I can't remember where. I came across a website for post-WLS that

contained a lot of recipes for meals you could make in muffin tins- then freeze so that we had a variety of

single serve WLS appropriate meals sitting in the freezer. Think meatloaf muffins.

I live alone and so fixing a chicken breast that I then have to eat 4 meals in a row (at least that's what it seems like) is boring.

I did come across this one for mini-pizza muffins I thought looked good-

Anyone else have anything along these lines????

Mini pizza Muffins

3/4 cup flour

3/4 tsp baking powder

1/2 tsp garlic powder

3/4 cup milk

1 egg, lightly beaten

4 oz part skim mozzarella cheese, shredded (about 1 cup)

2 oz mini turkey pepperoni, (about 1/2 cup)

4 oz low-fat sausage, cooked and crumbled

1/2 cup pizza sauce

Pre-heat the oven to 375°. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, garlic powder and baking powder; whisk in the milk and egg. Stir in the mozzarella, sausage and pepperoni; let stand for 10 minutes.

Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

Serve with pizza sauce.

check out the blog "the world according to egg face". Her name is Schelly and she has TONS of muffin type recipes that are carb-free and yummy. I adore her ricotta bake. It tastes just like lasagna without the noodles!

I totally agree with Lissa...Eggface is awesome!!!

I recycle stuff. Any type of meat (steak, hamburger, fish, etc.) can become my eggbites (simple eggface recipe, take 5 eggs, saute up any leftover meats/veggies, toss in some cheese and bake @350 for 30mins. Makes 24 mini muffins...they resemble crustless quiche.)

Shredded taco chicken becomes chicken tortilla Soup the next day. We take left over meat and put it on a tortilla with some Tomato sauce and make tortilla pizzas (eggface does this too, but that isn't where we got the idea.) Left over baked salmon becomes salmon cakes (mix egg beaters, salmon, and coat with bread crumbs and lightly fry in olive oil.) Even our left over steamed veggies get a light coating of Italian dressing and overnight in the fridge they become almost like a pastaless Pasta salad.< /p>

It takes time to learn how to recycle...but I was getting bored eating the same meal day after day. So my advice is to just start experimenting and you will find a way to recycle your leftovers into a whole new delicious meal!

Hi Lissa, This sounds great! I've gone to the blog section and tried to search for the title as well as "schelly" and am not finding it. Also custom searched by highest reviewed/viewed, etc., figuring hers would be up there with the better ones. Still nothing....

Do you by chance have the URL?

Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

Iʻm roughly 6 weeks post-op this morning and have begun to feel like a normal human, with a normal human body again. I started introducing solid foods and pill forms of medications/supplements a couple of weeks ago and it's really amazing to eat meals with my family again, despite the fact that my portions are so much smaller than theirs.
I live on the island of Oʻahu and spend a lot of time in the water- for exercise, for play,  and for spiritual & mental health. The day I had my month out appointment with my surgeon, I packed all my gear in my truck, anticipating his permission to get back in the ocean. The minute I walked out of that hospital I drove straight to the shore and got in that water. Hallelujah! My appointment was at 10 am. I didn't get home until after 5 pm.
I'm down 31 pounds since the day of surgery and 47 since my pre-op diet began, with that typical week long stall occurring at three weeks. I'm really starting to see some changes lately- some of my clothing is too big, some fits again. The most drastic changes I notice however are in my face. I've also noticed my endurance and flexibility increasing. I was really starting to be held up physically, and I'm so grateful that I'm seeing that turn around in such short order.
My general disposition lately is hopeful and motivated. The only thing that bugs me on a daily basis still is the way those supplements make my house smell. So stink! But I just bought a smell proof bag online that other people use to put their pot in. My house doesn't stink anymore.
