I got a few crock pot recipes off of SPARKRECIPES.com or an app off my Iphone. The other night I made the most tender pork chops i have ever tasted.. Last night was cornish game hens. any red meat steak or roast with some onion and garlic is good. just add a little water and set on med for 5-6 hours. i put it on before i go to work and when i get home it is done!! so tender and juicy makes great left overs

whole chicken and turkey breast is good too. just do the same as above minus the onion. DELISH. can pick it off the bone and have pleanty of moist ready-to-go protein!

You can use a beef roast or stew meat. Brown meat in skillet. Add 1 bottle of red wine, then enought water to cover the top. Add sage (1 tea), rosemary (1 tbl.) thyme (1 tea) and salt and some garlic powder. About 2 hours before you serve add some baby carrots and I add potatoes for the family. I take out my portion(s) and then reduce the liquid a bit and make gravy for the family. My family loves it. The meat absorbs enough of the flavor to make me happy too.

Thanks for the tip about the Crock Pot Girls on FB! There is also a FB group for Skinny Crock Pot. Lots of high protein, low carb recipes with little/no preservatives.

Kids - 4 chicken Breasts (okay of frozen), 2 Cans of Chream of Mushroom Soup, 1/2 can of skim milk, 1 T chicken bouillon powder. When fully cooked, pull out chicken and add a big scoop of light sour cream. Pour over whole wheat egg noodles.

Husband - 1 Boneless leg of lamb trimmed of all visible fat, 4-6 cloves smashed garlic, sea salt, 2 Tlbs olive oil, the juice of one large lemon. Serve with rice.

Mine - 3 frozen chix breasts, 1/2 cup broth, 1 can lite coconut milk, 1 cube asain curry. Yum!! Serve with cauliflower and carrots.

  • 6 - chicken Breast halves, no skin,
    1 jar (about 2 cups) your favorite Salsa (mild, medium, or hot)
    1-2 TBLSP Brown Sugar
    1 TBLSP Brown Mustard or Dijon Mustard

Directions

Place chicken in crock pot or casserole dish.

Mix all other ingredients in bowl and pour over chicken.

Cook in crock pot on low for about 6 hours, or bake in 375f oven for about 1 hour.

The sauce is delicious over rice, scooped up with baked tortilla chips, or even served over steamed veggies.

Does the Jim Beam sauce sit well in your tummy? I haven't had surgery and perhaps I am thinking about RNY.

Yes, everything except for lettuce and some breads, sits very well with me. But remember i am 21 months out. If I eat something that is a bit too sugary or fatty I do get a type of dumping syndrome as well. . . but yes it does sit with me very well

I have a roast in my crock pot at home right now! :-) Beef roast, small enough to fit in there (I have a smaller crock pot), can of beef broth, can of Ro-tel tomatoes, packet of dry onion soup mix. Just threw it all in there and turned on low. Can't wait to enjoy tonight! We like to shred the meat and enjoy in different ways--my husband puts it on a salad, and I like it with extra cut-up fresh tomato mixed in. Now that we're both sleeved, one small roast lasts us a LONG time with some left over for the freezer!

I have a large family (5 kids) so I throw whole pieces of meat in - no real recipes for that, but I wanted to point out that ham comes out fabulous in the crock pot. Don't use the spiral sliced or more expensive cuts, they dry out. The cheap butt hams with Water added are perfect. They have enough fat and water to keep it moist, cooking all day, but it drains off.

Pork loin with balsamic and dijon is tasty.

Chuck roast (pot roast) with a jar of pepperoncinis (sliced) and the juice, a few cloves of garlic and some beef broth or a lipton onion soup mix. Cook all day and shred. Put on a bun and melt cheese on top. Serve french dip style with a side of the juice. I eat it minus the bun, but this is an easy crowd pleaser.

bone in pork chops cooked with a jar of salsa, a can of black Beans and a can of corn, salt and pepper to taste. It is not half as good if you don't use the chops on the bone. The meat comes out tender and tasty, and the veggie mix makes a nice side dish. You can skip it if you're carb concious, but it still works as a family meal we can eat too.

Put some veggies on the bottom (I use potatoes and carrots typically but any will work) Put a put a whole chicken on top and season to taste. Cook all day. I will often put onions or lemon peels inside the chicken cavity to help flavor it.

Put a whole pork loin of beef roast in with a little bbq sauce and a bit of water. The water is so the bbq sauce doesn't burn, but you wont need much. Cook all day and shred for bbq pulled pork or pulled beef. I let the family add more sauce on theirs, but I don't use much in the crock pot, just a little for flavoring the meat, so it's not carb heavy. You can add a little liquid smoke (a little goes a long way) for that bbq flavor as well.

  • 4 weeks later...

I am now in love with shredded chicken. Place chicken breasts in about 1 cup of chicken broth and leave on low for 8 hours or high for about 4-6 hours and take out the chicken before serving and run your fork through it. YUM.

I've done it with taco seasoning and also with BBQ sauce...you could add whatever seasoning you like. Leftover meat in our household *always* gets eaten later or the next day!
