I used "miracle noodles" which have the same nutrition facts as Water (I swear it tastes and has the exact same texture as real noodles, really is a miracle) with tomato sauce (9 carbs and 5g of sugar and 2g of Protein for a 1/2 cup) and parmesan cheese and mushrooms and green Beans and meatballs and I am in shock how it tastes exactly like spaghetti and meatballs I had pre-op. The amount it came out to be will feed me for a week and it has so much protein-y goodness because of the meatballs (I put in a lot.) So happy!!! This could be a soft or regular food but I'm putting it in regular because it is a side dish with no Protein. But I get a craving for it and it's worth it about once a week. You could add summer squash too but I find it covers up the mushroom taste which is what I really want. This is absolutely beautiful with morels if you are lucky enough to have some. Ingredients: Mushrooms, whatever kind you want and as many as you want. I do 3-4 white mushrooms for a single serve. Half as many onions by weight, or as many onions as you like (none if you like). I do half a small onion for a single serve. Half to 1 tbsp butter, oil, or margarine (butter really works best, with …

http://www.lovewithrecipe.com/recipe/313.html Link to chicken Cordon Bleu recipe. Only bread item is a light topping of panko and bit of flour in the sauce, otherwise it's all protein- ham, Swiss cheese, chicken breast! I edited it a bit- kept the butter called for to make the roux in the sauce the same, but cut the butter in the panko topping to 2 Tbsp. I also subbed alpine lace reduced fat Swiss cheese for regular Swiss, and used lowfat milk instead of whole (don't try nonfat- you'll lose the creaminess factor). Makes a large 9x13 pan...would probably freeze well after chilling in the fridge. Cut into individual portions and defrost as needed! Very very tasty! …

For pictures and nutritional info see: http://sleevers.wordpress.com/2013/12/28/low-carb-high-protein-orange-chicken/ love orange chicken, but I don’t love all the fried, sugary stuff that goes into it. I thought I’d try a simpler, healthier version and I’m happy to say it turned out just fine. Wonderful orange flavor, not too sweet and syrupy. Would love to know what you think of it, if you try it. Ingredients 1.5 lbs chicken tenders 2 tsp baking soda 4 cloves crushed garlic 4-5 dried red chilis 1 tablespoon peanut oil For the Sauce 2 tsp orange zest juice of 1 fresh orange (zest it before you juice it, otherwise it’s no bueno, mess everywhere) 4 tablespoons soy sa…

I am on the puréed stage and I got one of those chickens they make in the store. I used the white meat added fat free refried beans, trader joe's green salsa, a little low fat cheese and some fat free chicken broth and put it in my bullet. Was pretty yummy and had a fair amount of protein in it.

I made this chicken for dinner the other night & it was delicious! It was very fast & easy, too, so that's a big bonus. You just mix up the marinade in a gallon baggie, stick in your chicken breasts & leave it marinating for awhile. Then throw all of it in a pan & bake it. Also, the leftovers were excellent sliced up on a salad the next day with a little of the leftover marinade used as the dressing. Enjoy! http://alidaskitchen.com/2013/02/07/baked-balsamic-chicken/

Pictures and nutritional facts at pizza for days. We used to get pizza once a week and although we got the “healthy” kind (thin crust, veggies, with half the cheese), it still wasn’t that good for us. I’ve been thinking about how to recreate this and although I’ve seen lots of cauliflower crust, meat crust, ground chicken crust etc. recipes, they seemed a bit contrived. So I tried this with Flatout bread and it actually worked out very well. The nice thing about individual serving pizzas is that I was able to make one with just pepperoni and cheese for my son at the same time. Makes 2 sleever servings, 1 serving for a non-op Ingredients 1 piece of Italian herb flatout…

Here we go place flatbread directly on the rack in a 350 oven for 5 minutes. In a pan, cook the ground turkey with onion, celery and a little jalapeno Make your own black bean frijoles by blasting can in your nutribullet with some onion and garlic powder, then warm in a pan with a little EVOO to prevent sticking. Once all of the incredients are warmed up, place 1/2 of the flatbread on a place and spread black Beans then layer with turkey taco meat. Top with lettuce, tomato and lots of cheese and salsa. Enjoy Sounds good doesn't it. I updated the post with the pic I took when I took it out of the oven. I topped it with black olives (my wife loves em) and lettuce…

New recipe on my blog with pictures of finished product as well as a few steps along the way. http://sleevers.wordpress.com/2013/09/23/417/ Recipe from Cook’s Illustrated. What we love about these crab cakes is that they don’t have fillers, mayo, and other flavor-maskers. A delicate shrimp puree sets up the binding, enhancing the flavor and increasing the protein content of these little crab cakes. Normally I try to simplify and/or modify recipes but I mean, it’s Cook’s Illustrated. I know better than to mess with perfection! I did remove a couple of steps that won’t change the flavor significantly, but the proportions are theirs. Makes 8 crab cakes, 1 per sleever, 2 p…

Ok, here is my chicken cordon blue recipe that I recently reimagined to make healthier. Start with a boneless, skinless chicken breast and pound flat with a meat tenderizer hammer, weigh and trim down to 4 oz. Take a slice of Aldi's lunch Mate 97% fat free ham and place it on the flat chicken breast, then take a slice of Sargento's Reduced fat Provolone cheese and place on top of that. Roll it. Now take a pack of shake and Bake Panko Seasoning and place the rolled breast in the bag and coat with the panko. Place on a cookie sheet and place in a 400 degree oven for 20 minutes. Relevant numbers are Calories 215, Carbs 6, Protein 33, Fat 6. P.S. forgive the picture…

Today's Recipe I haven't completely came up with a good name for yet but it is basically a Cheddar Stuffed Chicken breast with Pretzel Breading. So, preheat oven to 400 degrees. Take a Chicken breast and flatten it with a meat tenderizer hammer, trim to 4 oz if you want to ensure the numbers work. Get some Cabot - Sharp Extra Light Cheddar Cheese 75% Less Fat, it's available at Walmart, cut 1 oz and roll into the chicken breast. Next bread it with Shake 'n Bake - Crunchy Pretzel Flavored Coating Mix. Place on baking sheet and cook in oven for 20 minutes. Enjoy. Now for the pertinent numbers Calories 195, Carbs 6, Protein 33, Fiber 0, Sodium 820, and Fat 4.

My husband and I were sleeved together and we're following a high-protein, low carb diet. We're required to get at least 60 gms of Protein a day and I think that most RNY folks also need to keep protein counts high yes? I wanted to share my blog site which has lots of low-carb, high protein, largely paleo and largely gluten-free recipes. They're easy, many require very little skill or time to cook and I try to mix up the types of cuisine. I also have lots of pressure cooker and crock-pot recipes. If you are on full liquids I have some high protein Soups for those who are sick of sweet Protein shakes, as we were. I do NOT make money off this site, I just do it for fun…

One of my favorite things when I go onto solids is my crockpot! One of my favorite recipes is skinless chicken thighs, throw into the crockpot, season with salt, pepper and what other spices you like to use, squeeze a whole bottle of Italian Dressing over the chicken. Put the crockpot in low for 8 hours. And when you get home it is done! I usually would serve with a roasted veggie!!! The meat is super tender and melts and I think it will be ok for my tummy! Of course unless my taste has changed like it has with some items! Lol

Pics and nutritional facts at: food still and we’re tired of throwing it out or giving it away. One of the ways to make this happen was to buy smaller cooking pots. I’ve been using the Fagor multi-pot for pressure and slow cooking but it’s 6 quarts so everything looks really small–until you dish it out and then you realize you’ve made enough for an army of marauding Huns. So last week I bought a 2-quart multi-pot and scaled down our recipes. Just think–a pound of meat now makes 2 dishes, and each dish feeds us for 2 meals. It’s really hard to wrap my head around it still. So this week’s pound of ground beef was transformed to two dishes. A low-carb vegetable-meat chili …

Okay here's a paleo version of Shepherd's pie made with mashed cauliflower. Pictures & nutritional facts at: http://sleevers.wordpress.com/2013/11/09/paleo-low-carb-shepherds-pie/ My older son has always loved shepherd’s pie. When he was little, he’d sit on the kitchen counter and watch me make it for him. So one day, when he was about 3, I asked him how Mummy made shepherd’s pie. He thought for a bit, and then said “First you catch a shepherd and then you kill him!” Boys. Such ghouls. So I decided to try a paleo, low-carb version, which meant substituting mashed cauliflower for the potatoes. Technically this is a cottage pie, since I used ground beef. Makes 2 mea…

For once, I got organized, made a mental list, went to Costco and shopped with recipes in mind. SO not me, but it's worked out well. This week, I'll be posting the following recipes. In parentheses are what I bought at Costco for each recipe. I also tried to make smaller portions because I'm still cooking for an army, and we're having too many leftovers. So I defrosted one package of chicken thighs, and used them for two recipes here. I'm also going to try to be better at posting nutritional labels for the food. All are high protein and low carb. I just wanted to share a recipe that my husband and I did this week. He kept telling me that he had tried "Lettuce Wraps" a long time ago and liked them and we should try to make some. So we went to Sam's Club and picked up groceries and got the things we needed to make them. They turned out so good! I really like them and it's only 150 calories per wrap. If one is not filling enough for you (It is for me right now) then you can eat a second one and still get filled up on 300 calories! I added avocado the first time I made them and it was really good. That's not part of the recipe so you'd have to add the calories for that. I hope you enjoy them as much as I do! Here…

I love to cook and I do not use recipes. My family laughs because nothing I make ever tastes exactly the same twice. I cook, I taste a bit, I season, I taste, I stir and adjust, I taste... By the time it's all ready, my nose is running indicating that I'm full! Oh the irony! I get all the under salted, too little garlic, not enough heat tastes and only one or three bitesof the good stuff for all my efforts. WHAT TO DO!?!?! I do use a teeny tiny baby spoon and I barely take a lick. I can only hold a few tablespoons right now and I do log all nibbles, licks and chews. AHAHAHAHAA!! How to cook without tasting?? That is the question. Rule #5!!! Let the f…
