Spaghetti And Meatballs

I used "miracle noodles" which have the same nutrition facts as Water (I swear it tastes and has the exact same texture as real noodles, really is a miracle) with tomato sauce (9 carbs and 5g of sugar and 2g of Protein for a 1/2 cup) and parmesan cheese and mushrooms and green Beans and meatballs and I am in shock how it tastes exactly like spaghetti and meatballs I had pre-op. The amount it came out to be will feed me for a week and it has so much protein-y goodness because of the meatballs (I put in a lot.) So happy!!!

Just saw this old thread about miracle noodles..Trued them...awful, in my estimation. Also a pain to make. If I want pasta now, I have a few small bites of whole wheat..I still can't eat more than that, or my pouch hurts.

Yay, I just bought a mandolin, which has a julienne cutting blade. If you don't want to spend $50 (I cook a lot, so I'll use it), Oxo makes a "julienne peeler" for $10, available at Bed, Bath and Beyond. Perfect for zoodles, or sweet potatoes, or carrots, or....

Another great option that is much healthier would be to try spaghetti squash. Cut it in half scoop out the seeds. Cook in shallow pan upside down with a bit if water until tender. Pull it away from skin with fork and it resembles spaghetti. Add sauce and Parmesan and taste really good!
