Sushi made with quinoa

Has anyone made or had such made with quinoa instead of rice? I am dying for sushi, but don't want to so rhe whole rice thing. Thoughts?

Sashimi! It's what I eat when going to sushi.

I still get the fish (fresh salmon being my favorite)

And I still dip in a bit of soy and tons of wasabi!

The quinoa I'll pretty much eat with anything, it's a good carb and also has protein. Now the sushi part...... that's not how I roll. :huh:

I think it would be difficult to do sushi with quinoa because it spent have the starches that sushi rice has. You'd need to figure out how to make it stick together.

I'm with Laura - sashimi is certainly a way to get your sushi fix without the carbs.
