OK, total confession here, I ate this plate twice! No leftovers. My son (who lives 50 miles away) was tired of coming home on Fridays and finding out that his parents had totally forgotten that it was a Friday during Lent. (For non-Catholics, it should be no-meat but since my surgery we haven't been paying attention). Anyway, just for him and because I feel really good today, I followed all the rules: garlic/lemon shrimp, Greek salad w/feta and spaghetti squash with a little butter & Parmesan. It was delish and he was so happy ?

I don’t have a picture but I made this recipe,(Asian chicken meatballs), last week and it was super good. I personally skipped the peanuts and the mayo dipping sauce. Instead of an appetizer we had them as a lettuce wrap. I have been craving spicy since surgery. I highly recommend this one.

I haven’t posted in a while since my foods are pretty boring but I made myself what I call stroganoff soup.

Exactly. I have a bread machine also. I make bread for others but never myself...

It doesn’t taste exactly like it because I couldn’t add beef and you can taste more of the soup.

Hey!! So I tried the Coconut yogurt w fruit and was just fine. Prob was the pistachios. Although this week I am trying to get away from artificial sweeteners in my yogurt so I went light and Fit plain Greek yogurt. I squished up blackberries and put them in to sweeten it up-it didn’t. But I still ate it. I gave up sweet and low in my coffee and now use Truvia but I guess that’s an articulate sweetener as well?!
