  12. Ok now that I’m finally 3 months caught up I’ve decided I’m jealous of some of these meals. So as a makeup for missing out here’s a bunch of photos I meant to post. The top one is meal prep from last week. It’s a chickpea salad with lettuce, avocado, tomato, cucumber, olives, and a dressing made of cucumber, Greek yogurt, lemon juice and garlic powder.

  23. I roasted a chicken and the older kids made potato soup for dinner tonight. By the time I was hungry there was no potato soup and a picked over chicken carcass so I had some chicken in Caesar salad. The chicken carcass is currently becoming broth in its lovely jacuzzi.
  24. What I wanted versus what I ate and the approximate calorie counts. For what I ate it was good but those miracle noodles are super heavy on my stomach. Miracle noodles with sautéed onion and portobello mushroom, kimchi, fried garlic, with pickled cucumbers and hard boiled eggs in lono life beef broth.
  25. I bake mine inside of using the crockpot so the fat goes into the muscle and breaks it down a bit more. Corned beef is really just a preserved/pickled brisket so if brisket sits well for you then corned beef might as well. It’s about the same process as brining a poultry. Fun fact- it’s called corned beef because of the large salt crystals (aka “corns”) once used to preserve the meat.
  26. We usually eat it with sauerkraut or roasted cabbage and potatoes.
  27. Update on that salad. Ate a third and a kid pilfered the rest. ?‍♀️ Tonight’s dinner (pictured mid eating) is corned beef and cucumbers. I might eat a third piece of the corned beef and another cucumber slice (for a total of 2). I ate lunch super late so I’m really not hungry and it’s almost bedtime.
  28. My food choices lately have been questionable at best but, SALAD! A huge salad. Probably like 600 calories for the whole thing (won’t finish it in one go) but I just wanted all the briny pickled things with lettuce, feta, and eggs.
  29. I didn’t read all the replies but 800 calories doesn’t sound like a lot until you break it down and supply your diet with nutrient dense foods over energy dense ones. Here’s what I would do for an 800 calorie day- Breakfast- 6tbsp egg whites, a medium diced tomato, 2 cups of fresh spinach and 1oz reduced fat cheddar with 1/2 cups blueberries Lunch- a tuna packet mixed with 1tbsp light mayo, on one slice 35calorie keto bread with 2 cups salad greens and half a cup sliced cucumber afternoon snack- protein shake dinner- chili made with 1/2 cup canned kidney beans, 1/2 cup tomato sauce, 1/4 cup diced onion, and 1/4 cup diced bell pepper dessert- 1/2 cup nonfat plain greek yogurt mixed with sugar free, fat free pudding mix. Total count- 803 calories, 77g carbs (24.5g fiber), 16g fat, 95g protein
  30. Been eating a lot of salads lately. Also didn’t end up eating the biscuit.
  31. I made a turkey butt cake for family thanksgiving this past weekend. Also used the rest of the cake batter to make cupcakes, then made cheesecake brownies, a pumpkin pie, a cheesecake pumpkin pie, apple pie sandwiches (pastry top par cooked and then the bottoms topped with pie filling and then par baked then topped and baked the rest of the way), peanut butter chocolate rice crisp treats, and my 12yr old made cake pop balls.
