Rotisserie chicken, mashed potatoes and peas. My food choices are very boring lately. BUT I went to a bakery a few weeks ago on a trip and ordered a slice of cake. Well I take a ton of pics but when I look closer, there are tiny bugs everywhere. So I am playing it safe these days.

Nothing wrong with boring food choices. That’s my usual everyday. 😁

Took my nephew on a shopping trip for his 8th birthday and we each had a macron to celebrate at a boulangerie patisserie. (He also had a jam donut!) Mine was a lemon meringue. The lemon helped cut the sweetness. No tiny bugs like you had @GreenTealael thank goodness.

I so miss that chain of Patisseries since moving state! The Moulin Rouge cake was our go to for celebrations!

It’s always busy at the Chermside one and their range is enough to tempt a saint. As you know I generally avoid sweets but when my nephew looked at me with his big eyes and asked if I would have one too I couldn’t say no. And yes it was yummy? 😁

i've been eating a version of this sandwich (well, more like a salad on a slice of toast lol) for the past 3 days. first, because its sooooooo good, and second because i made a whole jar of the green goddess dressing that i want to use up before it goes bad.

the dressing is so delish: fresh basil, chives, taragon, lemon juice, garlic, greek yogurt and anchovies blitzed in a food processor. the recipe said to use some good mayo, but i didn't have any, so.

anyway me and Mr. shared this work of art for breakfast, so yum.

whole grain toast, lettuce, cucumber, tomato, fresh mozzerella, avocado, pickled onions, the aforementioned dressing, seasoned with black pepper and sumac.

OH, and i added a heaping tablespoon of this bacon jam i made to add calories (also delish and easy to make: crispy bacon, carmelized onions and shallots, brown sugar, maple syrup, chili pepper simmered until jammy...YUMMMMM)

I love love the spicy Tunacado from Joe and the Juice (if you're unfamiliar with it, it's spicy tuna mousse, pesto, avocado, tomatoes on very very thin slices of flat bread from this Danish originated cafe, YUM!). I don't have a location where I live, but I make sure that I eat it at least once a day when I'm traveling.

So today's mission was to recreate it at home. I didn't have thin flat bread so I pulled 2 slices of sourdough from my freezer, toasted it them in a pan , placed my cast iron pan on them while aggressively pounding them and trying to place my entire weight on the pan until they became flat, it was legit a workout.

In a food processor I whipped up my tuna, 3 heaping tbsp of Greek yogurt (original recipe uses mayo I believe but I don't like mayo with tuna), diced onions, chopped parsley, serrano peppers, red pepper flakes, salt and lemon and pulsed until mousse consistency. I also made homemade pesto with basil, pine nuts, parmesan, garlic, lemon and salt.

The mousse looks funny but I promise it tasted really good, the only issue is that I whipped it to a very thin consistency that it seeped out of the sandwich when biting into it.

Final product! It is so good but kinda messy, if you're gonna make it don't over whip your tuna mousse, I ate around 1/4 of it with jalapenos. I will likely finish it as the day goes, but right now, I'm stuffed!

Cream cheese, whipped feta, quark or a set type of greek yogurt might help with the consistency

You know how cottage cheese is everywhere and in everything? I've long loved cottage cheese before all the hype. And I've grown to crave it since I had my WLS for some reason.

So here's a picture of my first meal (already dug into almost half of it).

A slice of protein toast (this particular brand is really yummy), around 0.5 cup of fat free cottage cheese, I prefer the low fat one but that's all that was available in the store, still so good though. Two tsps. of my homemade chili crisp. It's pretty elite, if I say so myself.

Dinner was Mongolian beef, some brown rice with chickpeas, a boiled egg and my homemade chili crisp. Ate everything except the yolk!

Snack:

Congee with shredded chicken, crispy fried garlic and spring onion. Ate a few bites and decided I wasn’t hungry anymore. Will try again later.
