I'm especially interested in before and after meal photos (take a pic at the point you feel restriction) but it can be of recipe substitutions, your refrigerator/pantry/shopping cart/etc

Ok now that I’m finally 3 months caught up I’ve decided I’m jealous of some of these meals. So as a makeup for missing out here’s a bunch of photos I meant to post. The top one is meal prep from last week. It’s a chickpea salad with lettuce, avocado, tomato, cucumber, olives, and a dressing made of cucumber, Greek yogurt, lemon juice and garlic powder.

Benefit of having nieces who are in their mid to late 20s is they take you out to dinner and they enjoy very good restaurants too.

This potato beignet with spanner crab was divine. Three bites of heaven. Would have been happy to have another couple of these. Wish I’d taken pxts of the pork main & carrots in beef fat with cashew nut butter cream which we shared & were also delicious. My nieces & my nephew-in-law to be shared two desserts but this cream bun with raspberry puree topped with meringue was so tempting I almost had a taste.

I find restaurants who do share plates much easy to manage as I can eat as much as I want, have little tastes of a variety of food & not be faced with too much food on a plate or be taking home leftovers.

Rotisserie chicken, couscous and tomato cucumber salad. One of these days when the weather is cooler I will bake my own chicken again. I prefer to roast it with carrots and potatoes. Store bought is easy but not nearly as good.

Made a feta dip to take to drinks this afternoon. Only problem is it’s a bit salty because it uses danish feta - glad I didn’t add the salt they had in the recipe. If worse comes to worse can always just eat the crudités! 8g of protein per serve so plus (not mentioning the sugar from the honey or fat content from the feta & cream cheese though 😁).

Do you have a link to this recipe. I recently discovered that I like feta and I’m excited because I Always assumed since I’m not a fan of blue cheese I would not like it.

It's by Recipe Tin an Australian cook Nagi with lots of great recipes @ShoppGirl . I love how you can adjust a slide to change the portions and the ingredients adjust. I used pistachios, honey, olive oil lemon rind and thyme leaves for my topping on the dip.

Even though she said using Greek feta makes the dip grainy, I think I’ll try half danish & half Greek next time to reduce the saltiness. It did go down well despite how salty it was - the crudities helped. Oh and I think adding a little more honey than you think when drizzling will also help balance the saltiness.

Chicken, couscous and mixed vegetables I’m still not ready to bake yet, so I grabbed baked chicken tenders from the deli counter and the market. Surprisingly this was large enough to make into two meals.
