Made a yummy lamb curry but unfortunately my sleeve didn’t like it :( I’m finding it a challenge converting my old recipes into bariatric friendly ones.

Baked apple cinnamon oats. It tasted very good but the additional baking on top for 20 min and another dirty dish makes this a not-so-quick meal. Basically the same ingredients als with the cake, except that I added some soy milk and used less almond butter. Didn't have some raisins though.

Improvised meal. However, I'm craving a burger and I have some veg burgers that have to go as well so I think I'm preparing this curry for tomorrow. Here are some pictures before the sauce is on and everything is assembled.

Mix all these well.

Spoon 1 to 2 teaspoons into each spot on a mini muffin baking pan that you’ve sprayed with Pam.

Sprinkle a touch of reduced fat mozzarella on top of each.

Bake 20 minutes at 375.

I’m thinking of making a bariatric cooking/recipe blog. I love cooking and being inventive and really want to stay within my approved foods. So it may be neat!

Vietnamese noodle bowl (mine has shiratake noodles, the fam got theirs with traditional rice noodles): caramelized ground pork, cucumber, tomatoes & carrots. More nuoc cham sauce in the sode.

My serving shown: 246 calories

Ate everything except for about half the noodles....

Creamy tomato soup with chicken and beans and a bit of Parmesan on top. Ate it all...as usual? About 265 kcals for the whole thing. Super yum!

Mount Monadnock in Jaffrey, NH. Had hoped for an even nicer view, but weather conspired to keep it very cloudy in the morning and the summit was smack dab in the middle of the low-lying clouds. Last time I'd been up there was 26 years ago. I did not remember it being quite that much of a trek back then. My legs are still sore as heck.

Up and down was a total of 2200 calories burned. And yet, I managed to gain 2.8lbs on this morning's weekly weigh in. Color me less than happy about that. First weight gain since February. Here's hoping things start moving in the right direction for next week!
