Recommended Posts

I have fixed shrimp every way I know or think I know and it hasn't hit that spot. If anyone has shrimp dishes (other than salad) I'm opened to suggestions... Please share those shrimp recipes

I like to bake or grill foil packets filled with shrimp, mushrooms & zucchini all topped with salsa.

I also like those ingredients in spaghetti sauce topped with mozzarella.

How about shrimp served chilled with cocktail sauce? That never gets old for me!

I love shrimp.

My husband and I are both sleevers, and we eat a lot of sushi. Since I can't eat regular white or brown rice but CAN tolerate rice paper, we make spring rolls with boiled shrimp, julienne veggies (cucumber, lettuce or cabbage), some cilantro (ESSENTIAL, in my opinion), all wrapped up in the rice paper. It's cool, it's no-cook, it's high Protein, and it's fantastic. We dip into peanut sauce, which is basically Peanut Butter, some chili sauce, and some soy sauce with a squeeze of lime juice, thinned with Water. We LOVE these! For you carb trackers, there are 4 carbs in a piece of rice paper--and I can only eat about half a piece of the rice paper-wrapped spring roll at a time. You may be able to handle more. Enjoy!! :)

I love stir fry these days. I buy a bag of stir fry mixed veggies, heat up a half cup of those veggies with a little stir fry sauce and throw in some shrimp (5-6 usually) and that's a meal for me. I usually can't finish the veggies.

One of my favorites is shrimp nachos. Take chips or a tortilla, add shrimp and cheese (I like mozzarella or some kind of jack) and bake it or nuke it. Serve with salsa and/or cocktail sauce. Really good.

  • 1 pound peeled and deveined medium shrimp

  • 1 cup fresh lime juice

  • 10 plum tomatoes, diced

  • 1 large yellow onion, diced

  • 1 jalapeno pepper, seeded and minced, or to taste
  • Place shrimp in a glass bowl and cover with lime juice to marinate (or 'cook') for about 10 minutes, or until they turn pink and opaque. Meanwhile, place the plum tomatoes, onion and jalapeno (and avocados and celery, if using) in a large, non-reactive (stainless steel, glass or plastic) bowl.
  • Remove shrimp from lime juice, reserving juice. Dice shrimp and add to the bowl of vegetables. Pour in the remaining lime juice marinade. Add cilantro and salt and pepper to taste. Toss gently to mix.
  • I love this on seseme tortilla chips

  • 2 avocados, diced (optional)

  • 2 ribs celery, diced (optional)

  • chopped fresh cilantro to taste

  • salt and pepper to taste

If you like spicy - 3.7 carbs per serving and 11 grams protein! (3 poppers)

Shrimp Jalapeño Poppers

Prep Time: | Cook Time: | Servings: Serves 8 (serving size: 3 poppers) | Difficulty:

Ingredients:

12 jalapeño chiles

1/4 teaspoon cumin seeds

8 ounces cream cheese, softened

8 ounces Leyden cheese, shredded

3 green onions, thinly sliced

1 cup cooked bay shrimp

Directions:

1. Preheat grill to medium (350° to 450°). Wearing kitchen gloves, halve chiles lengthwise. Scoop out seeds and ribs with a spoon.

2. Toast cumin seeds in a small frying pan over medium heat until fragrant, 1 minute. Transfer to a food processor, add cheeses, and whirl to blend. Put cheese mixture in a bowl and stir in onions and shrimp.

3. Spoon cheese filling into chiles. Lay a sheet of greased foil on cooking grate. Set chiles, filling side up, on greased foil, cover grill, and cook until chiles are tender and cheese is melted and starting to brown, 15 minutes. Let cool slightly before serving.

Notes: Leyden is a Dutch cheese that's like gouda with cumin seeds mixed in. If you can't find it, use regular gouda and a few more toasted cumin seeds

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
