speaking of leftovers...

Mr. brought home a doggy bag of a souvlaki meal for me, but i really only wanted the pita.

so i cut up what he brought home, sprinkled some olive oil and spices on it and air-fried it to crunchy. ate it with some homemade tzatziki (greek yogurt, minced garlic, olive oil, lemon juice and salt and pepper)

ate it all.

p.s. i logged it as naan on MFP cuz it was alot thicker than a standard pita!

101 calories for it all.

avocados and greek yogurt.

333 cals for the bowl, shared it with Mr., ate all the yogurt a little more than 1/2 the avocados.

last night's dinner: Sashimi!!!!

had 1 piece of each type except for the scallop and salmon cuz the Kid got to those before i did, lol. In total i had 6 pieces, estimated at probably 250 cals.

Also, i ate all the Ikura (aka salmon roe/red caviar) off of the Kid's rice bowl cuz she says that eating Ikura feels like she's got "exploding fish-oil Pop Rocks" in her mouth! 😂😂😂😂😂 (she cracks me up) approx 3 tbsp of it for 120 cals.

also had an extremely overpriced Shiso Margarita that was more straight-up sake-tasting than anything else 🤷🏻‍♀️

oh, and 1 slice of beef tataki.

In all i figure all cals for dinner added up to about 575 calories for the night.

on a food posting spree!

Pastel de Nata (Portuguese egg custard tart).

I didn't particularly like the pastry of this particular one so i just ate the middle/insides!

couldn't find an MFP entry for "crustless egg tart", lol so i just used plain old "egg custard" to add to my food log.

98 calories???

about a month or so ago a made a humungous batch of (tomato-based) meat sauce from a giant lump of ground beef i got on sale from costco.

I made spaghetti that day and froze multiple ziplocs of the sauce for another day. i also assembled a couple lasagnas and froze immediately.

fast forward 2-ish months and i baked one of those lasagnas for 2 hours from frozen, and voilà! dinner for the fam.

I think i left it a little too long without the aluminum foil to brown the top layer of cheese, hence the over-done top corner...oopsies!

anyway, served myself about a 1.5 cup volume portion and ate half.

i make awesome lasagna, btw 😂

first pic: lasagna right out of oven, second pic, my dinner: 465 cals for the bowl (are 1/2-ish, as said above. lasagna is vert filling!)

Oh don’t you hate that. When you reach into the vegetable drawer for the cucumber & squish. Ugh!

Please tell me you had loads of salt & pepper on your avocado. Can’t eat it plain. It’s just flavourless mush.

Extra brown cheesy topping on your lasagne is always tasty & a little crunchy.

The sashimi plate is so pretty.

Wait… you guys are using the drawers for vegetables?! I use one for meats and one for cheese and keep the fruits and vegetables in the middle where they’ll get seen to be eaten.

Funny how we have our quirks. My meat & cheese always goes up higher where it’s colder. My vegetable drawers aren’t as cold (so no half frozen vegetables) & have a moisture control so the vegetables don’t dry out. Plus they’re clear so you can see everything. I keep my Protein Bars in the egg shelf in the fridge door (removed the plastic thing the eggs slot into) & my HRT in the butter section.

i generally eat my avocados commando as i usually eat them with other more heavily seasoned food items. but if/when i do add stuff to it, yes, its usually salt, pepper, cayenne and a slash of lemon juice. 😉

however this heat wave we are having up here has ripened my remaining stash of avo much sooner than expected, so i made some avocado "ice cream" with them before they got over-ripe.

avocados, full-fat coconut milk, sweetner and vanilla extract.

haven't had any yet but am pretty excited to try 'em out!

my past couple fridges have had multiple drawers/enclosed compartments in them, so we basically have a drawer for everything lol.

But yes, in my last two-drawer fridge, it was for produce...cuz they had humidity controls

@Arabesque: i used to keep my refrigerated meds in my butter compartment too! It shared the space with Mr.'s cologne. now its just his cologne in there, lol

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

Iʻm roughly 6 weeks post-op this morning and have begun to feel like a normal human, with a normal human body again. I started introducing solid foods and pill forms of medications/supplements a couple of weeks ago and it's really amazing to eat meals with my family again, despite the fact that my portions are so much smaller than theirs.
I live on the island of Oʻahu and spend a lot of time in the water- for exercise, for play,  and for spiritual & mental health. The day I had my month out appointment with my surgeon, I packed all my gear in my truck, anticipating his permission to get back in the ocean. The minute I walked out of that hospital I drove straight to the shore and got in that water. Hallelujah! My appointment was at 10 am. I didn't get home until after 5 pm.
I'm down 31 pounds since the day of surgery and 47 since my pre-op diet began, with that typical week long stall occurring at three weeks. I'm really starting to see some changes lately- some of my clothing is too big, some fits again. The most drastic changes I notice however are in my face. I've also noticed my endurance and flexibility increasing. I was really starting to be held up physically, and I'm so grateful that I'm seeing that turn around in such short order.
My general disposition lately is hopeful and motivated. The only thing that bugs me on a daily basis still is the way those supplements make my house smell. So stink! But I just bought a smell proof bag online that other people use to put their pot in. My house doesn't stink anymore.

Oh yeah, something I wanted to rant about, a billing dispute that cropped up 3 months ago.
Surgery was in August of 2023. A bill shows up for over $7,000 in January. WTF? I asks myself. I know that I jumped through all of the insurance hoops and verified this and triple checked that, as did the surgeon's office. All was set, and I paid all of the known costs before surgery.
A looong story short, is that an assistant surgeon that was in the process of accepting money from my insurance company touched me while I was under anesthesia. That is what the bill was for. But hey, guess what? Some federal legislation was enacted last year to help patients out when they cannot consent to being touched by someone out of their insurance network. These types of bills fall under something called, "surprise billing," and you don't have to put up with it.
      https://www.cms.gov/nosurprises
I had to make a lot of phone calls to both the surgeon's office and the insurance company and explain my rights and what the maximum out of pocket costs were that I could be liable for. Also had to remind them that it isn't my place to be taking care of all of this and that I was going to escalate things if they could not play nice with one another.
Quick ending is that I don't have to pay that $7,000+. Advocate, advocate, advocate for yourself no matter how long it takes and learn more about this law if you are ever hit with a surprise bill.

Some days I feel like an infiltrator... I'm participating in society as a "thin" person. They have no idea that I haven't always been one of them! 🤣
