I’ve upped my homemade corn tortilla game. 60 calories for each tortilla. (I weigh them) 3 ingredients, Masa, Water and salt. No oil, no fat. You do need a cast Iron tortilla press though, cheap ones don’t cut it.

It’s a great way to bump up boring dinners and add a bunch of veggies. We are huge fans of Rick Bayless sauces and marinades, Frontera Grill. Really low in calories and not bland at all.

So far so good, my weight has maintained stable 2.5 years out. I’m super conscious about my weight and have to be diligent. I think Americans should get bonus points this year. I’m exhausted!

Anyway, I highly recommend making your own tortillas!

OMG let me tell you this dish was life changing for me and so simple and it’s all thanks to Tabatha Brown on YouTube. I am a very bad cook buttt omg this was I think the most delicious meal I have ever made myself lol. If anyone else want to know how to cook vegan go to YouTube and search Tabatha Brown. I think she should have her own cooking show. I am in love with her taco Tuesday in the airfrier . This measures at 4oz and I did finish but I felt sick I was so full but damn it was delicious.

It has
chickpea
Green, red, yellow, orange peppers
Purple onion
Mushrooms
And
Taco seasoning
Garlic
Turmeric (just a pinch for anti inflammatory)
Paprika
Everything but the Bagels
Pink Himalayan salt.
And in my bowl I pit a few slices of avocado and feta cheese crumbles n fresh spinach.

I did put a few other seasoning then she did but omg it’s delicious I can’t wait to eat again I may have to have some tomorrow for Breakfast.

Extraordinary Bites. Good toasted. Probably a little funky plain. They stock it in my Walmart. 🤷‍♀️😊

Turkey Bacon, cheese and Avocado Wrap.

It was originally just going to be turkey bacon and cheese but I forget I needed to finish an avocado I opened. If I make it again I would go without the cheese or less avocado. It's relatively high calorie compared to what I was aiming for but worth it.

🤣 Walmart is one of my least favorite places to go. I usually just do a pick up order. bread is in the freezer by other frozen Keto foods in my store. Kind of crumbly on the texture, but I think it tastes good!

OMG thanks for posting the packaging!

I used to be enchanted with the idea of everything I need in one place (Walmart). Now it feels like a labyrinth and I'm tired before I even get there. I tried pick up/delivery once but there were so many substitutions or unavailable items I had to cancel the order.

I'd suggest trying pick up again. I agree, at the beginning of the pandemic pick up was terrible because the cuts and subs were out of control. But now I get minimal subs and cuts. And the I do get subs are nearly always an upgrade. Like no Great Value flour, King Arthur instead. Or subbing a 24 oz frozen broccoli for 2 -16 oz.

King Arthur flour was nearly impossible to find at Walmart since everyone decided to start baking bread at the beginning of the pandemic. I had to start using great value unbleached which turns out to be a decent sub. AND I couldn't find bread machine yeast for about 2 months so I was rationing everything.

Ok I am going to try it again.

Is that butter lettuce? It looks really good. I don’t do tortillas so that’s a really good option for me!
Recipe for the filling?

Yes, baby butter lettuce! For the filling I first season the ground chicken with salt, pepper, garlic powder, a little cumin, adobo, and onion powder. I also add about two tablespoons of garlic paste. I then chop up one bell pepper, an onion, some scallions and jalapeño and add it to the chicken. It tastes great with fresh squeezed lime!

Next week I plan on doing chicken lettuce wraps again but with chicken thighs cooked in my new ninja air fryer

Heres a pic of the lettuce wraps I posted on this thread a while back:

Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL

Still purging all of the larger clothing. This morning, a shirt that I ADORED wearing ended up on top. Hard to let it go, but it was also hard to let go of those habits that also no longer serve my highest good. Onward and upward!

Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
