Hubby made these delicious pancakes for us this Sunday morning combining egg, cottage cheese, vanilla extract and oatmeal in blender. I added a dabble of real Vermont maple Syrup and cantaloupe. Leftover pancakes heat up really well for another great meal like a creative sandwich. ;]

We had an unusually violent storm hit late this afternoon... Hail pellets hit loudly against our large kitchen windows while I was making the herb chicken and wild rice Soup recommended by Silly Kitty. Needless to say, the soup was a resounding success making a big bang for dinner tonight! Haha. Made it with baby spinach instead of chard. Yum!

If/When it finally cools down a bit here in Brisbane will be making this soup... love all the ingredients!

Pro tip: cottage cheese can be used for basically anything. Low fat, high Protein, if you don't like the lumps, just mash it to creamy.

Yum! One of my favorites... I love fresh blueberries and slivered almonds + cinnamon, too. I usually have this several times a week. Also, love pineapple tidbits and banana mix. I am not a yogurt fan. So, Breakstone 2% low-fat - 45% less sodium cottage cheese small curd is a go to staple. What brand do you like?

Its, been a while, but glad to see one of my fave threads still going strong with so much deliciousness. I LOVE looking at pictures of food. Is that weird? LOL.

You guys have stepped up your plating game!

I've basically stuck to eating my go to meal 95% of the time: salads with stuff on top, here's some. I know, I know, kinda boring...but DELICIOUS. I heart salad 4-ever.

Fierce hailstone storm yesterday produced this wonderful spring like day! Windows wide open with a splendid breeze. Savoring every moment before the tropical heat waves and hurricane season begins. Speaking of savoring, delish sandwich for lunch today with Sunday's Protein pancake leftovers... Happy Monday fellow foodies! ;]

Yay! My favorite gal is back for a visit... Salads boring, NEVER! I eat one a day and yours look gorgeously delicious. I'm coming over for lunch sometime. Haha. What is your favored dressing shown here? Hubs and myself would LOVE this Soup. Might you share the recipe? Fresh sweet potatoes are a staple at our place. We mix it in Bobby's kibble everyday, too. And, his favorite apple pumpkin Snacks by Fruitables. Spring sprung yet?

Ah, I've missed seeing pics of Robert & Bobby (adorbs!!!). Like I have always said, if you are EVER in my neck of the woods, I'm taking you out for dinner/drinks. Or salad. Or take pictures of salad. Or play dress-up. LOL.

I always use the same dressing on all my salads: a vinaigrette a make by the litre: lemon juice + ACV + Braggs' Soy + Sesame Oil + sweetener. I could drink this stuff alone (and I have been know to do so when there is some left in my bowl, lol).

And YES! Spring is finally here to stay (it totally snowed here a week and a half ago!). Soooo glad. Now if only Corona would go away so I can wear some spring dresses out the door....

*oh & please let it be simple enough for my BF to make w/o my help 😂*

Just leave out the bacon topping, sub the chicken stock with mushroom or vegetable broth, and voila! It's vegetarian! (and yes, its so easy BF can totally do it solo, lol)

Edited to add: you could probably also make it vegan if you lose the cream...i think it would still be creamy without it if you cook the sweet potatoes longer?

Okay, then. Let the lock down cook-off begin Ms. Greentealeal! I'll make the original recipe less the bacon and you make a vegetarian version? I still have all the fresh herbs left from chicken and rice Soup recipe Sunday. Let's put on those domestic diva aprons and post sweet potato and corn chowder creations. Anyone else care to join in? Fun! Inspired now for my one exciting excursion out a week: The grocery market. Haha.

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

      Iʻm roughly 6 weeks post-op this morning and have begun to feel like a normal human, with a normal human body again. I started introducing solid foods and pill forms of medications/supplements a couple of weeks ago and it's really amazing to eat meals with my family again, despite the fact that my portions are so much smaller than theirs. 
      I live on the island of Oʻahu and spend a lot of time in the water- for exercise, for play,  and for spiritual & mental health. The day I had my month out appointment with my surgeon, I packed all my gear in my truck, anticipating his permission to get back in the ocean. The minute I walked out of that hospital I drove straight to the shore and got in that water. Hallelujah! My appointment was at 10 am. I didn't get home until after 5 pm. 
      I'm down 31 pounds since the day of surgery and 47 since my pre-op diet began, with that typical week long stall occurring at three weeks. I'm really starting to see some changes lately- some of my clothing is too big, some fits again. The most drastic changes I notice however are in my face. I've also noticed my endurance and flexibility increasing. I was really starting to be held up physically, and I'm so grateful that I'm seeing that turn around in such short order. 
      My general disposition lately is hopeful and motivated. The only thing that bugs me on a daily basis still is the way those supplements make my house smell. So stink! But I just bought a smell proof bag online that other people use to put their pot in. My house doesn't stink anymore.

      Oh yeah, something I wanted to rant about, a billing dispute that cropped up 3 months ago.
      Surgery was in August of 2023. A bill shows up for over $7,000 in January. WTF? I asks myself. I know that I jumped through all of the insurance hoops and verified this and triple checked that, as did the surgeon's office. All was set, and I paid all of the known costs before surgery.
      A looong story short, is that an assistant surgeon that was in the process of accepting money from my insurance company touched me while I was under anesthesia. That is what the bill was for. But hey, guess what? Some federal legislation was enacted last year to help patients out when they cannot consent to being touched by someone out of their insurance network. These types of bills fall under something called, "surprise billing," and you don't have to put up with it.

      I had to make a lot of phone calls to both the surgeon's office and the insurance company and explain my rights and what the maximum out of pocket costs were that I could be liable for. Also had to remind them that it isn't my place to be taking care of all of this and that I was going to escalate things if they could not play nice with one another.
      Quick ending is that I don't have to pay that $7,000+. Advocate, advocate, advocate for yourself no matter how long it takes and learn more about this law if you are ever hit with a surprise bill.
