Not really. I've done away with most dairy....but I am not adverse to having an egg or using them in recipes once in a while. I wish I liked kim chee....my mom used to make it all the time when I was little. Who knows, maybe my taste buds changed and I'll like it these days. The recipe actually sounds good.

Ooh, that looks amazing! Definitely try the Follow Your Heart grated parm with that. The other parms are just the sprinkle on type and wouldn't make that melty goodness on top. Going to try this!

Thank you for that link. I don't think I can get that around here, but I am going to look at my local co-op where I find most of my WFPB stuff.

does it taste like cheese?

They might have it! If you have a Whole Foods they will have it too. I think it tastes pretty close but I haven't had dairy in over a decade so I've all but forgotten the flavor. But you'll find that none of the vegan cheese are really JUST like dairy cheese. They are very tasty in their own right, but they're slightly different (ranging to VERY different). You can make some items that people would have no idea (like my queso or mac and cheese are a hit at parties) but some will just take a bit of adjusting. Again, it's still very tasty, it's just different from dairy.

I did want to interject a morsel. For those that find they still need a bit of animal foods, don't despair.

The Okinawans of Japan DID eat a primarily vegetarian diet, but even so, they did also consume a couple eggs a week, the equivalent of one 4oz serving of fish a week, and two 3oz servings of pork a week.

If you add that up, they had a full-size portion of animal Protein 4 nights of the week. Which is substantial for us bariatric folks.

(It's just not much when compared to the lumberjack that eats 4 eggs and 1/4 pound of bacon for Breakfast, 8oz of hamburger patties for lunch, a 12oz ribeye for dinner, and a pint of ice cream for dessert.)

I agree with this. I don't think anyone should despair. Simply making the effort to eat more fruits, veggies, seeds, nuts and whole grains and less meat is a great place to start. In fact the research shows that eating more of the whole foods helps to protect you from any damage eating some meat may otherwise cause.

I am sure there will be some compromises in my future, but I am not going to stress about it. For now I am just enjoying the healthy ride I am on...lol..

I too agree. Incorporating more fruits and veggies and making it the star on your plate helps. It's easy that I didn't really care for meat in the first place, but I don't mind having it sparingly...maybe special occasions or if I'm invited to dinner and the main course is meat. I have to be respectful. 😊

Totally forgot to take a pic, but I made this awesome recipe today. One of the times I wish I couldn't just eat a few bites! Lol Had to eliminate the bun after two bites so that I don't get too full too quick though.

Was at the grocery store today and ran in to a lady at the vegan/produce area. She gave me such great reviews on so many of the products. I was buying some veggie "hotdogs" (hopefully I can get my kids to like them!) She stated that she went plant based after watching a few documentaries back in April and hasn't turned back since. Now I can't wait to try some of the other items...it really has been fun with the variety of WFPB dishes. There really is no end....😊

You will get there before you know it. It's hard to imagine that it's only been 3.5 months since surgery for me, I'm sure you'll feel the same at this time as well and to enjoy your veggies!

I know. I have found so many recipes I would like to try, but I don't have time to cook them all. I want to make a goal to cook one or two new things each week.

      Oh yeah, something I wanted to rant about, a billing dispute that cropped up 3 months ago.
      Surgery was in August of 2023. A bill shows up for over $7,000 in January. WTF? I asks myself. I know that I jumped through all of the insurance hoops and verified this and triple checked that, as did the surgeon's office. All was set, and I paid all of the known costs before surgery.
      A looong story short, is that an assistant surgeon that was in the process of accepting money from my insurance company touched me while I was under anesthesia. That is what the bill was for. But hey, guess what? Some federal legislation was enacted last year to help patients out when they cannot consent to being touched by someone out of their insurance network. These types of bills fall under something called, "surprise billing," and you don't have to put up with it.

      I had to make a lot of phone calls to both the surgeon's office and the insurance company and explain my rights and what the maximum out of pocket costs were that I could be liable for. Also had to remind them that it isn't my place to be taking care of all of this and that I was going to escalate things if they could not play nice with one another.
      Quick ending is that I don't have to pay that $7,000+. Advocate, advocate, advocate for yourself no matter how long it takes and learn more about this law if you are ever hit with a surprise bill.

      Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
      I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL

      Still purging all of the larger clothing. This morning, a shirt that I ADORED wearing ended up on top. Hard to let it go, but it was also hard to let go of those habits that also no longer serve my highest good. Onward and upward!
