I'm especially interested in before and after meal photos (take a pic at the point you feel restriction) but it can be of recipe substitutions, your refrigerator/pantry/shopping cart/etc

inspired by this post, and prolonging the acorn squash love fest, i went and made these stuffed acorn squashes tonight!!!

the stuffing was bread cubes from old dinner rolls, with the insides of a couple spicy Italian sausages, dried cranberries, apples, onions, more acorn squash, vegetable broth, butter and seasonings.

they are quite delicious! and huge! AND sooooo filling!!

Mr. and i shared 1 of the halves for dinner and we were done (he ate most, natch).

kinda like when you're a kid and you push your food around on the plate to make it look like you ate (but totally DIDN'T!)

Anyone else like this?
Ordered a subway 6” sub with peri peri chicken, veggies and cheese thinking I could eat the whole thing (always overestimate how much I can eat and I’m always way off). Felt my restriction after a couple of bites and ended up tearing the bread and only eating the chicken. Pre WLS I would eat almost two of those or one with a side of chips, soda and cookies.

Baked some brown butter chocolate chip cookies and they turned out insane. The whole house smells of caramel/brown butter.

I had 3/4 of one. Used much less sugar than the recipe called for and I still feel I could reduce it a tad more.

ALWAYS. i have more of a "food ordering" addiction than an actual food-EATING one.

it reached a point long ago that Mr. will UNDER-order cuz he knows he will end up eating mine. WIN-WIN, in my opinion!

i make a mean, super duper sweet filipino milk flan. i limit myself to like a single bite or two at a time but i will say its a hit at parties.

FILIPINO LECHE FLAN:

INGREDIENTS

  • 10 room temperature egg yolks ( i usually use the unused egg whites to make a palvova or almond Cookies or macarons)
  • 1 can condensed milk
  • 1 can evaporated milk
  • 1 tsp vanilla extract
  • (optional) 1 tsp fresh lime juice
  • 1/2 cup sugar

DIRECTIONS:

  • Preheat oven to 350
  • melt sugar in bottom of pans
  • whisk egg yolks
  • add condensed milk, stir until combined
  • add evaporated milk, vanilla and optional lime & mix well (slowly so no air bubbles)
  • pour mixture through cheesecloth or sieve to remove any undissolved bits
  • pour into pans
  • tap the pans onto hard surface to remove any bubbles
  • cover pans loosely with foil
  • put pans into a roasting pan then fill roasting pan with Water until reaches halfway up the flan pans
  • bake 35-40 mins until set (firm but still jiggly)
  • let cool and put in fridge for at least 3 hours
  • remove from pan by placing a plate on top and carefully flipping over to release to goodness lol

I’m definitely making this! My boyfriend became obsessed after having Cuban homemade flan in Miami during one of my plastics rounds. Just whispering flan from a different room and he’ll hear it. ?

No keto ice cream for me either, I think I have an allergy to monk fruit and the one brand I like made my mouth itchy.
Also it seem to like unpopular or ice cream flavors of bygone eras: mint chocolate chip (but it must be mint flavored vanilla, not green), rum raisin and custom ice cream shop flavors of lemon poppy seed and lavender honey (which I was told was the most requested by their octogenarians patrons).

Hey bygone era flavours??? Mint choc chip was one of my favourite ice cream flavours in the before days. (Favourite chocolate was mint dark chocolate.) But yes, it had to be green coloured ice cream. Even though the flavour is the same, the colour seemed to enhance the mint flavour - mind games.

Baked some delicious smelling brownies (I more than halved the amount of sugar). My little one was like “they’re to die for mama” and the eldest goes “you mean they’re to live for ?” with an eye roll. The hubs feedback was “please don’t make them again because I can’t stop eating them. These are the best brownies you’ve ever made”

I omitted chocolate chips and replaced with drizzled nutella on top and pecans. Believe it or not I didn’t try them but will tonight.

Food. A lot of listeria contamination warnings lately but maybe it has always been this way and I’m just noticing.
