Made a choose your own kimbap for the kids for dinner. I ate the chef bites (end pieces) before the picture and may have tasted all the individual pieces before assembling.
I am going to take the rest to work for dinner. Tasty 😋

Eggplant lasagna for me (eggplant replaced noodles) and for the eggplant hating hubby, bell peppers stuffed with noodle-less lasagna goop. Ate everything on my plate and it was delicious. Hubby was sooooo happy. ☺️

I ❤️ Eggplant too! Hubby won’t touch it, so I don’t get to eat it that often, as cooking two meals is a pain in my behind. No breading...too much work and save a bit on calories. I just sliced (1/3 inch-ish) and salted it to get rid of extra moisture. I roasted the slices for about 20 minutes before assembly of the “lasagna” so it would be soft in the finished dish. It was so good! The eggplant was soft, but not mushy or watery in the finished product. I can’t wait for lunch today 😬

What spices did you use? Looks yummy

Oh man that was a while ago! I think it was half of the chickpeas smashed half left whole mixed with Mayonnaise, salt, pepper, onion & garlic powders, paprika, curry, chives and a squeeze of lemon or lime

Made Korean style beef bowls for dinner tonight. Another picky eater approved meal! Used this recipe. Personally, I could’ve added more gochujang but I wanted kids to be able to feel their mouths. I had about 1/3 cup rice under the stuff on top. There’s probably about 2Tbsp of leftovers in the bowl that I don’t plan on eating.

That looks delicious! I noticed that your bowl shows that it was about a half cup portion. How far our are you from your surgery?

About 4months post VSG to RNY revision and almost a year from my VSG. Rice is definitely a slider food for me so I try to be careful with it. Never thought a bowl with the measurements in it would be handy but here I am. 😂

I like that bowl! What do you mean by “slider”?

It means I can eat more of it than I can other things and it’s easy for my body to digest they kind of slide through the digestive system. Other foods I find that are like that for me- multigrain crackers, toast, and sometimes yogurt depending on the kind.

Other people have different ones for them.

Does that mean that you have to be careful with them because they are easier to over eat?

Exactly. And they tend to be higher calories so can go over calorie range quickly.

I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

I changed my profile image to a molecule of protein. Why? Because I am certain that it saved my life.

Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      April Surgery
Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?
      Thanks

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
