Chili Relleno Casserole (eggface) is AMAZING!

Recommended Posts

Ok, this recipe is so good I am compelled to share.

I was doing my normal once-a-month cooking frenzy where I prepare and freeze a months worth of lunches and one of the recipes I chose this time was the Chili Relleno Casserole from the World According to Eggface site. Instead of using leftover turkey, I use some leftover chicken breasts I had grilled and frozen awhile ago and needed to use up.

I prepared it as instructed and divided it into 5 portions, here is the nutrition information I came up with via MyFitnessPal per portion:

Calories: 236

Carbs: 21.7g (14g of this is from the black beans)

Fat: 6.4g

Protein: 22.9g

This looks good! :D

ETA: I just read the ingredient list. I would probably put in twice the cumin. And more black pepper. But I am fanatical that way. ;-)

Seriously, you guys need to try it - it was one of those meals where I was sitting at the table alone talking to myself with every bite saying "holy crap, this is amazing!!"

Just wanted to follow up - I made this yesterday for my dinners this week! Delicious!

and I made her turkey squash casserole for my lunches - managed to use up the leftover turkey hanging out in my freezer with completely different flavor profiles. Highly recommend both!

I wonder what the calorie and Protein count is per serving. And what a serving size is.

I changed my profile image to a molecule of protein. Why? Because I am certain that it saved my life.

Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      April Surgery
Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?
      Thanks

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
