Penne Alfredo (for my BF) This pasta is made out of red lentil flour only. The instructions say to cook for 7-9 minutes but I found that it needs maybe 10-12 minutes to be tender otherwise it’s molto al dente.
I tried about 10 pieces and they were ok. I still don’t like pasta even though I love red lentils. It’s the texture for me.

Today’s lunch is homemade chicken soup with chickpea pasta, same brand @GreenTealael used. Only ingredient was chickpea flour.

@GreenTealael : I loooooooooove those mini sweet peppers. I could probably eat 1/2 bag if I took my time. YUM. Also, does BF prefer the alt pasta vs. regular pasta?

I used this one... bit calorific as it’s per chaffle. I’m going to try just the cheese and egg one later

I’ve come back to say the cheese and egg chaffle is so bad in comparison with the one I made last night. I will have to count the calories in with the almond flour.

I really wanted soup but my BF is a vegetarian so Tofu noodle soup and lazy biscuits. (Traditional noodles and flour used)

...so basically you had boiled veggies and tofu. lol

I made a batch of Instant Pot Beef Chili for the fam tonite, but since I don't like beans, I just ate a bowl of the toppings instead. I also picked out a few chicken chunks from a 3 day old salad still in the fridge to protein it up a bit, lol

Cheddar, Jalapenos, Sour Cream, Hot Sauce, Leftover Chicken Chunks: 145 Calories. Ate it all.

@GreenTealael, I just did some biscuit recipe googling and there seems to be a divide between those who make biscuits with egg, and those who don't. Which camp are you?
