What can I do with...Avocado?

I love it in salads and California rolls, but still prefer it the simplest of ways - cut in half, remove stone, place in a bowl (with the skin still on), in the center add just a tad of oil and a little cider vinegar, salt and pepper and scoop out with a spoon. Instead of plain oil and vinegar, I will use Wishbone's Red Wine Vinaigrette dressing.

I know! I know! If course you can substitute the flour and crumbs to lower carb options. I'm sure the result would be the same....delicious!

RECIPE:

Makes about 24 fries

Here's what you need:

- 3 Avocados (slightly firm)

- 3 eggs

- 1 cup flour

- 1 cup panko bread crumbs

- 1 tsp salt

- 1/2 tsp cayenne pepper (adjust to taste, or substitute with garlic powder)

- Pepper

Directions:

Slice the avocados in half, and then slice lengthwise into wedges.

Mix the bread crumbs with the cayenne pepper and salt.

Roll the slices in flour, then in the whisked eggs, then in the breadcrumbs.

Place the slices on wax paper on a baking sheet. Spray well with cooking spray. Add a sprinkle of black pepper if desired.

Bake for approximately 12 minutes at 400˚F/204˚C. Flip alway through and re-spray. Enjoy with your favorite dipping sauce!

Okay that's it! I'm buying avocados today. Probably gonna cost a mint here midwinter but I don't care!

I am off the beaten track but I love avocados as a guacamole with sardines, onions and Tabasco!Ha!

I love making a salad with black Beans, avocados, tomatoes, cilantro, and a squeeze of lime.

when I was pre-op, I used to occasionally put it in smoothies instead of a banana - it makes them really creamy (but watch how much you're drinking - it's really high in calories!!).

I make an avocado sauce. smashed avocado, tiny bit of milk of choice, salt pepper to taste. I serve it over black bean Pasta with a warmed salsa verde.

Jalapeno Poppers

1 avocado

sliced bacon

sun dried Tomato (1/4 cup)

salt

jalapeno slices

honey (tsp)

mash avocado, add salt and diced sun dried tomato, to chunky consistency, slice bacon in half, place one slice jalapeno on half bacon slice, dab avocado mixture, then wrap. Take the other bacon half and wrap it perpendicularly. Place on baking sheet. Repeat with remainder of bacon slices. Place in oven and bake to crispiness of preference. Some people like their bacon crispier than others.

Eat and enjoy.

Also if you don't eat bacon, this mixture can be used to stuff chicken breast or to lay shrimp or fish across.

This sounds positively decadent.

Jalapeño poppers were my kryptonite pre-op so I may have to try this one.

Oh and for a option with less fat, there is always turkey bacon. I have tried it all. Though this is my recipe from prior to surgery so I haven't made them recently because I can't have them yet.

I LOVE avocado. They make everything taste better.

Before surgery, I used to toast a sandwich thin, add a piece of mozzarella cheese, sprinkle with garlic powder, add pre-cooked bacon, melt quickly under broiler then top with fresh Tomato and avocado. It was so dang delicious.

Now I add it to any Breakfast, garnish any dinner or make various salsas or guacamole out of it!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

      Iʻm roughly 6 weeks post-op this morning and have begun to feel like a normal human, with a normal human body again. I started introducing solid foods and pill forms of medications/supplements a couple of weeks ago and it's really amazing to eat meals with my family again, despite the fact that my portions are so much smaller than theirs. 
      I live on the island of Oʻahu and spend a lot of time in the water- for exercise, for play,  and for spiritual & mental health. The day I had my month out appointment with my surgeon, I packed all my gear in my truck, anticipating his permission to get back in the ocean. The minute I walked out of that hospital I drove straight to the shore and got in that water. Hallelujah! My appointment was at 10 am. I didn't get home until after 5 pm. 
      I'm down 31 pounds since the day of surgery and 47 since my pre-op diet began, with that typical week long stall occurring at three weeks. I'm really starting to see some changes lately- some of my clothing is too big, some fits again. The most drastic changes I notice however are in my face. I've also noticed my endurance and flexibility increasing. I was really starting to be held up physically, and I'm so grateful that I'm seeing that turn around in such short order. 
      My general disposition lately is hopeful and motivated. The only thing that bugs me on a daily basis still is the way those supplements make my house smell. So stink! But I just bought a smell proof bag online that other people use to put their pot in. My house doesn't stink anymore.
