Can we talk Edamame? Steamed pods with sea salt, or even better, with lemon pepper. It's so easy to prepare and the nutritional stats are amazing. Some people prefer it out of the shell, but I find that I eat it more slowly when I have to do a little more work.

If you've not tried it, you should. For me, this is a staple I often order at restaurants (thank GAWD it's trendy!!) as my meal. I can stretch out this app for the entire meal and still have leftovers and it's rarely more than $4.

Here's what you'll find in a half-cup serving of shelled edamame (or 1 1/8 cup edamame in the pods):

  • 120 calories
  • 9 grams Fiber
  • 2.5 grams fat
  • 1.5 grams polyunsaturated fat (0.3 grams plant omega-3 fatty acids)
  • 0.5 gram monounsaturated fat
  • 11 grams Protein
  • 13 grams carbohydrate
  • 15 mg sodium
  • 10% of the Daily Value for Vitamin C
  • 10% Daily Value for Iron
  • 8% Daily Value for Vitamin A
  • 4% Daily Value for Calcium

As you can see, that little serving of edamame gives you a bunch of fiber: 9 grams, about the same amount you'll find in 4 slices of whole-wheat bread or 4 cups of steamed zucchini. It has almost as much Protein as it does carbohydrate. It contains around 10% of the Daily Value for two key antioxidants; Vitamins C and A. And for a plant food, it's quite high in iron; it has about as much as a 4-ounce roasted chicken breast.

Love edamame. Looove it. PictSweet makes a steamable bag with sea salt that I adore. There may or may not be 4 or 5 bags in my freezer right now.

Edamame is one of my favorites! costco has them in individual microwaveable servings. I love mine with some sea salt and I also make my own roasted garlic, put it in a pepper mill and sprinkle some on with the sea salt and OMG! Yummy!

We just bought a large box of dry roasted edamine nuts from one of the wholesale club stores (had to be BJs or costco?)

200 calories and 22 grams of Protein in each plastic bag. They make a nice alternative to the Quest Protein Bars we snack on.

I love edamame, but haven't had any in awhile. But now that I'm reading this post, I'm going to pick some up at Trader Joe's. I like it in the shell; plenty of "eatertainment" :D

It was the only time I ever sampled it. I did print out some of the recipes in the links that were shared , and we try some, if we can find a source for it. I don't like the sodium content in roasted products, so in effect I do agree with you.

yum. we always have bags of them in our freezer. grew them once in the garden, but they are so much cheaper to buy!

Oddly, I love it any way it comes. I'll eat it in a box and with a fox. I'll eat it here and there, I'll eat it anywhere!

      Oh yeah, something I wanted to rant about, a billing dispute that cropped up 3 months ago.
      Surgery was in August of 2023. A bill shows up for over $7,000 in January. WTF? I asks myself. I know that I jumped through all of the insurance hoops and verified this and triple checked that, as did the surgeon's office. All was set, and I paid all of the known costs before surgery.
      A looong story short, is that an assistant surgeon that was in the process of accepting money from my insurance company touched me while I was under anesthesia. That is what the bill was for. But hey, guess what? Some federal legislation was enacted last year to help patients out when they cannot consent to being touched by someone out of their insurance network. These types of bills fall under something called, "surprise billing," and you don't have to put up with it.

      I had to make a lot of phone calls to both the surgeon's office and the insurance company and explain my rights and what the maximum out of pocket costs were that I could be liable for. Also had to remind them that it isn't my place to be taking care of all of this and that I was going to escalate things if they could not play nice with one another.
      Quick ending is that I don't have to pay that $7,000+. Advocate, advocate, advocate for yourself no matter how long it takes and learn more about this law if you are ever hit with a surprise bill.

      Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
      I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL

      Still purging all of the larger clothing. This morning, a shirt that I ADORED wearing ended up on top. Hard to let it go, but it was also hard to let go of those habits that also no longer serve my highest good. Onward and upward!
