My Lunch: A Pictorial Attempt To Show You Life Will Be Normal

If you consider eating Indian food normal that is :)

So if you're worrying you won't be able to eat or enjoy your food or be normal? Here's what I made for lunch today. Brown rice for the kids, ground beef curry, cucumber/tomato/Greek yogurt salad, palak paneer (spinach. with a homemade cheese). Apart from the rice, all good for us sleevers to eat.

I sometimes see people thinking they won't enjoy food, or that they can only have baked chicken and steamed vegetables. SO not true. I make Indian, Thai, Ethiopian, Greek etc all the time.

What is true however, is that my two kids (23 and 13) and my husband and I all ate--and we finished about a fourth of the food you see here :)

Scrambled egg and bacon

I have this a lot. At least a few a week. Sometimes sauté mushrooms instead of the bacon. Sometimes I make a piece of toast as well but I only eat about 1/3 of it. Of course, we have three hens so we have a lot of eggs for basically "free" (they don't eat much grain).

How wonderful to have access to your own eggs.. I love it as a quick brekkie, and I also, like you, enjoy mushrooms :)

Today it was protein shake, then egg salad 2whites, 1 full egg, then roasted broccoli cauliflower soup puréed , next salmon tonight. 3weeks out for me...

Lettuce wraps with him cheese Red onion and tomato mmmm lunch on the run :)

So another example of making do. Got stuck in RI airport and won't be making it home tonight. Flights all jacked up. Early dinner/snack? Starbucks decaf iced soy latte with 2 servings of protein powder. 20 gms of protein in my cup! Woot woot!

Ham is pretty lean if you don't eat the rind. I has 50g of ham, steamed cauliflower, and a couple crackers with cream cheese for lunch today.
