What ya eating tonight?

I had a small sweet potato, with a tablespoon of i cant believe its butter,

And i boiled a boneless skinless chicken breast. With salt and pepper, curry, garlic powder and some soul food seasoning. After it cooked i put a tablespoon of BBQ sauce to the side so the bites of chicken wouldnt be to dry,

All was good, filled up quick even tho i was slow eating

I just downloaded a coupon for it, I thought that was great!

They are really good

It's hubby's birthday, so going to Texas Roadhouse. Plan on having a little ribeye and grilled shrimp. I know my husband is going to get the 20 oz, so I'm trying to decide of I should order my own or have a few ounces of his.

Meatloaf made with 96% lean ground beef and Parmesan cheese as the binder instead of bread crumbs

Yummy!

Baked kale lettuce (chips substitute) an baked chickpeas. Yum!

I made the ricotta bake but I improvised a bit and beefed it up w/more protein. I mixed the ricotta according to instructions and put it in my casserole dish, topped it with sauce, then I added cooked ground chicken mixed with sauce on top of that, then I topped it all with mozzarella cheese. It's in the oven now. Sort of a lasagna w/o the pasta. I got the idea because I actually just put together a small lasagna for my husband's dinner, too, and I had extra meat. :-)
