What ya eating tonight?

I had a small sweet potato, with a tablespoon of i cant believe its butter,

And i boiled a boneless skinless chicken breast. With salt and pepper, curry, garlic powder and some soul food seasoning. After it cooked i put a tablespoon of BBQ sauce to the side so the bites of chicken wouldnt be to dry,

All was good, filled up quick even tho i was slow eating

I'm a big chip eater well former eater and I've been searching alternatives for like dips and such...would you say homemade baked tortilla chips is okay....everything else seems to be high in carbs

yes I use regular corn tortillas, and use a spritz of virgin oil. with sea salt, and bake them. I tried that low carb brand of tortilla and they sucked

Have you tried making cauliflower crackers instead of using chips? I use it for my pizza crust, but if you spread it thinner, you can cut the crust into chips and toast them until they are crisp. Almost zero carbs, still crunchy and they go great with dips and cheese.

hmm never heard of that...I'll have to try that too

My basic recipe is one cup cooked, chopped, and well-drained cauliflower mixed with one cup low fat cheddar cheese and one egg, salt, pepper, garlic powder and oregano. Spread really thinly on a sprayed sheet tray and bake at 400 for 20-25 minutes. Let cool. Cut into crackers and crisp under broiler or in toaster oven. So much healthier than tortillas.

Yep. I use the same recipe. Last night I topped it with a couple tablespoons of homemade pesto, shredded rotisserie chicken breast, halved grape tomatoes and fat free mozzarella and stuck it under the broiler...chicken caprese pizza!

okay now that sounds so yummy!!

I made a frittata with onion zucchini yellow squash mushrooms peppers tomato and mozzarella cheese I had with garlic bread and applesauce

Seriously you are all so brave. I am 4 weeks post op tomorrow and my diet still consists of soft foods. No meats. I had half of a piece of fish yucky and I ran to bathroom to almost puke. To ight was an oz of shrimp and cottage cheese.

I was meatballs and sauce and turkey and lunch meat. I'm so scared!!!
