Soy Milk, Almond Milk, Cow Milk?

My husband is lactose intolerant so we usually have Soy or Almond milk in the house. I tried making SF Butterscotch pudding the other night with vanilla Almond Milk and it was runny and tasted gross.

What kind of milk do you all use to make pudding, mashed tators, Protein Shakes, etc. ???? any words of wisdom or help you can give me would be great. Thanks in advance :}

I'm a recent almond milk convert myself and I love it! I buy unsweetened and vanilla (when I want a little treat) so yummy! I use it in all my cooking in place of milk, and it in Protein Shakes and it came out fine, but yet to use it in pudding- I was actually just wondering if you could use it to make pudding and If it would work.

I tried to make pudding with soy milk. I was not successful, other than producing a thick liquid. However, that thick liquid did have a nice flavor!

My nut recommended skim plus because its high in Protein. I but the one w/ Fiber cause i need all the fiber i can get it tastes like whole milk and I have no problem drinking it, Highly recommend!!

non-dairy milks don't work in pudding. It's the casein (animal protein) in milk that makes the pudding thicken. Without it, it really doesn't work.

although sometimes people will use half as much non-dairy milk with the pudding mix...and that makes it somewhat thicker, but it's really not the same. Perhaps you can try Lactaid?

I'm not sure what HEBs is, but we have nothing. I live in a small town we have a Smith's, Safeway & Walmart. for any health food type stores we have to go to Las Vegas.

@Fallenangel2904 do u the unflavored for cooking and the vanilla for your shakes?

@enigmachik I was thinking that but then my hubby will have to stay away from it.

You could buy your hubby tofu pudding. It sounds weird, but it's quite tasty!

The same thing happened to me when I tried to make pudding with almond milk, because I am lactose intolerant as well. I use lactaid milk when I make pudding or cook something that requires milk, but I also take lactaid pills with it so there aren't any symptoms whatsoever, cause sometimes lactaid milk still gives me gas.

What about rice milk? Another thought, what if you added egg white Protein to it? Wondering if that would thincken it up w/the alternative milks.

I drink all of those... but try to stick with skim milk as much as possible for the highter protien.

I love all the alternative milks and recommend any of them...they just don't really work for pudding. You really need the casein in order to thicken up the pudding. I wonder if the eggwhite idea would work. Someone should experiment and report back. haha.

My household is lactose intolerant as well and I buy either Lactaid milk or just recently purchased the Walmart brand of Lactose Free Fat Free milk. Made some SF lemon pudding with it and it turned out delicious!

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
