Cornbread Mini Love Muffins

Cornbread muffins loaded with omega-3's. Goes great with Turkey Chili.

Number of Servings: 24

Tips

Cook time listed is for mini-muffins. Regular sized muffins take 15-20 minutes. For nutritional value for a regular sized muffin, multiply by 4.

Ingredients


  • *'jiffy' corn muffin mix, 6 serving
    Milk, 1%, .33 cup
    Egg, fresh, 1 large
    **Flax Seed Meal (ground flax), 2 tbsp
    Chia Seed Nutiva, 1 tbsp
    *Splenda, 1/4 cup
    3/4 tspn Almond Extract
    1 tspn red food coloring

Directions

Mix all dry ingredients together. Mix all wet ingredients in measuring cup. Mix wet and dry together. For best crown, leave sit for 3-4 minutes, stir again and then add to muffin tin. Hint: Spray each muffin wrapper with a small amount of non-stick spray. This keeps them from sticking to the side of the wrapper.

Serving Size: Makes 6 regular muffins or 24 mini muffins

Believe it or not it's the seeds that you put on chia-pets. It's really good for you & is considered a superfood.

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
