This is the best chili I've ever had. Addicting, hard not to eat it for several meals in a row:

Soup, you just make prep it and go to work. Then dinner's ready in the slow cooker when you get home. Skip the black Beans and corn to reduce the carbs:

No link, but last night I made some Healthy Parmesean Crusted chicken and brocholli in the the George foreman.

I was cooking for the family so adjust accordingly,

3 chicken Fillets

1/4 cup Italian bread crumbs

1/4 cup Parmesan

zest of lemon, or a packet of real lemon

1 tsp of olive oil

Mix the above in a bowl with a fork until it pack nicely

Put the chicken in the george foremen that has been seasoned with EEVO and then spoon on bread crumb mix and pack it down, Bake for 25 minutes or until 170 internal temp add Broccoli when 15 minutes are left..

I use the George foreman Evolve, it has a deep dish plate and tilt it forward so that any oils run away from the chicken. You can also do this recipe in the oven.

I tried this yummy meatball recipe with a few changes:

http://allrecipes.com/Recipe/Fast-and-Friendly-Meatballs/Detail.aspx

I made the following changes:

1/2 tsp sage

2 T parmesan

2 egg whites instead of 1 egg

finely minced onions to taste

garlic to taste

For a fairly low carb dinner, I ate a single meatball with a little marinara sauce and some zuchini and mushrooms in the sauce. yum.

I changed my profile image to a molecule of protein. Why? Because I am certain that it saved my life.

Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
