Bacon Cheeseburger Quiche

This low-carb dish is great for any meal and perfect for reheating. If you are looking for a healthier way to eat a cheeseburger, here is the answer.

Ingredients:

1 lb very lean hamburger, or ground turkey

1 small onion, chopped

4 slices crisp cooked turkey bacon, chopped in bits

3 eggs

1/2 cup lite or olive oil Mayonnaise

1/2 cup half and half

8 oz low cal. shredded cheddar or low cal. Swiss cheese

Garlic powder to taste, optional

White pepper

Directions:

Brown hamburger in skillet with onion. Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer to a fine mix. Drain well of grease and press into a deep dish pie pan then set aside. Preheat oven to 350 degrees. Combine remaining ingredients in mixer bowl and whip well. Pour mixture over beef crust and bake 40-45 minutes, or until top is browned and set. Cool 15-20 minutes before slicing. This can be packaged in plastic bags or containers for meals quickly microwaveable over the next 3-5 days. Does not freeze well.

Number of Servings: 6

sounds good but high in fat maybe?? Beef, whole eggs, cheese... Do you have the calorie, fat info. (If I wasn't so lazy I could probably figure it out.) Anyway it does sound good!

Yes, I was thinking of replacing the beef with white meat ground turkey and the bacon could also be turkey, egg beaters to replace the whole eggs, reduced calorie cheese(because I will die before I use fat free cheese  but I can't think of a mayo replacement.

And to the original bander that offered up this great recipe please don't take offense that I just disected it.

I made this tonight for dinner. I used the olive oil mayo and egg beaters. Now I went the real route on the bacon bits and I used asiago cheese but only 4 oz. It gave it a wonderful flavor.. This recipe rocked !!!

I paired it with fresh cooked spinach with toasted pine nuts and garlic.

Thanks for sharing it

I regularly substitute fat free evaporated milk in my quiches instead of half and half with very good results. That's another way to cut down some of the fat in the recipe.

Any nutritional info or where could I put the recipe in to calculate it?

Thanks much =)

Sounds great. I will substitute ground bison for the beef. It is healthier than beef. Has very little fat, doesn't shrink up because of that. Has fewer calories than beef. Taste better than ground turkey. Draw back is it is pricey. My kids are good to me. they buy it for me. 1 lb is 2-4 meals depending on what I use it for. It's just me so it averages out to about $1.25 per meal for me for the bison. I want to try the bison hotdogs. But they aren't sold in the stores around here. Olive oil mayo rocks. love that stuff. I don't use low fat cheese except swiss. The rest is full flavor. The evaporated milk is good or also mix it with powder milk. Just use a little less. Can't waite to try this recipe.

If you make the recipe with the turkey bacon, 93% lean ground beef, 2% cheddar cheese and the fat free evaporated milk and cut it into 8 slices, you would have 155 calories and 6 grams of fat per serving which is very good for such a tasty dish.

All I did to get this information was to go to www.dailyplate.com and click on create a meal and then list all the ingredients and then click on it to add to my plate which then shows the total calories and total fat grams. You just divide that into the number of servings to get the nutritional value for the recipe.

Enjoy and thanks for sharing the recipe. Linda

Oh, forgot, that nutritional information I used above was using egg beaters original as well, not eggs. Linda

I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

So proud of you Cat. Getting into those smaller size clothes is half the fun isn't it?. Keep up the good work!!!!

I changed my profile image to a molecule of protein. Why? Because I am certain that it saved my life.

That's brilliant! You've done amazing!! I should probably think about changing my profile picture at some point. Mine is the doll from Squid Games. Ironically the whole premise of the show is about dodging death. We've both done that...

Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

I may have to have gall bladder surgery during my weight loss surgery. Not thrilled about it either but do not want 2 recovery times. Just want it over with.

Thanks for your post. I may need to rethink my decision... :(
