Lentil Cookbook?

So, I'm 10 months out and still having problems eating solid foods (doc knows, nothing they can do). Since this appears to be my life, I need to get out of the rut of only eating yogurt for Breakfast and dinner. Lentils seem like they go down fine. We have a meal delivery service here that is run by immigrants/refugees and I have been able to get all sorts of delicious Middle Eastern, Indian, and African (lots of stuff from Eritrea and Ethiopia)-style lentils from that. But those have a lot of salt and oil, so I'd love to be able to replicate them by cooking at home. Does anyone know of a good lentil cookbook that has a lot of different styles of cooking? Thanks!

I 💜 lentils...

But a Lentil only cool book... Hmmmm thats super specific so try Google

Also can you branch out to other legumes as well (so you dont get stuck in a rut)?

All legumes/beans can be cooked very very tender and mashed blended into stew/soup? You can even add unflavored Protein Powder, yogurt, cheese or cottage cheese as a topping.

I have problems digesting Beans and lentils. I have soaked them, rinsed them, and cooked them with kombu, skimmed the foam and done everything I have heard of to help, but still get gas from anything other than a very small amount of beans, lentils, hummus etc...
I have often cooked with fennel, but in smaller amounts than this recipe called for.
I made Lentil and Mushroom Tagine from the Whole Foods Market Cookbook. I did not follow the recipe exactly - I usually never follow recipes exactly - but it called for 2 cups of lentils and 2 teaspoons of fennel seeds. I did soak the lentils overnight because I had to be at work at 6 am so I cut up the veggies and put them with the seasoning and some Water and the rinsed lentils in the fridge for dh to just put in the crockpot in the morning along with the veggie broth and can of tomatoes.
I have a mortar and pestle got it cheap at Ross a few months ago and I love it so I crushed the fennel some and that soaked overnight with it.
The lentil stew or tagine whatever that means was fantastic - and I had no tummy trouble.
I thought it was a lot of fennel to use and you could definitely taste the fennel, but it was yummy and easy on the tummy.
Just though I would share that in case other people may want to try it.

      Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
      I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL

      Still purging all of the larger clothing. This morning, a shirt that I ADORED wearing ended up on top. Hard to let it go, but it was also hard to let go of those habits that also no longer serve my highest good. Onward and upward!

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
