I'm pre-op and for dinner last night I made BBQ chicken and roasted carrots and zucchinis for dinner, and here's where the accidental mushies came in...I overcooked the zucchini. (I ate all my veggies and only half my chicken)

I cut and quartered 4 zucchini sprayed them with olive oil, sprinkled garlic salt and onion powder, cooked at 400 degrees for 30 minutes and out came the most delicious MUSHY zucchinis ever. Good news was that it made plenty for 2 with leftovers, so that's quite a few meals post op. So if anyone is looking for an awesome and easy mushy recipe, there you go. :)

Any other great mushy or soft food recipes out there anyone want to share? I'm trying to make a mental cookbook for when my time comes! Hoping for next month!

One of my favorites is using Eggplant or Yellow Squash. If you remove the skin, it can be a soft/mushy food. But I like to "blacken" mine under the broiler. You could bake them if you prefer. I after cooking, I spray them with a little canola oil, toss on some salt and black pepper and they're good to go!

I've gotten out of the habit, but Spaghetti Squash is good too. Split the squash in half, lay face down on cookie sheet, bake in the oven for 1 hr OR cover each half in plastic wrap and microwave for 30 minutes. Again, I spray them with canola oil and toss on some salt and pepper. They are done when you poke the the thickest parts with an ice pick or knife and you feel it slide in like warm butter, if you feel a crunchy sensation, it needs more cooking. B)

Oh man, I LOVE spaghetti squash! I made actual spaghetti with it and it was more delicious than real spaghetti with noodles!!! :) I definitely want to experiment with squash more.

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
