I'm pre-op and for dinner last night I made BBQ chicken and roasted carrots and zucchinis for dinner, and here's where the accidental mushies came in...I overcooked the zucchini. (I ate all my veggies and only half my chicken)
I cut and quartered 4 zucchini sprayed them with olive oil, sprinkled garlic salt and onion powder, cooked at 400 degrees for 30 minutes and out came the most delicious MUSHY zucchinis ever. Good news was that it made plenty for 2 with leftovers, so that's quite a few meals post op. So if anyone is looking for an awesome and easy mushy recipe, there you go.
Any other great mushy or soft food recipes out there anyone want to share? I'm trying to make a mental cookbook for when my time comes! Hoping for next month!
