guacamole on everything!

I made the best guac yesterday so I thought I would share the recipe - its nearly identical to chipotle guacamole

4 avocados

2 medium sized de-seeded jalapenos

3 medium roma tomatoes

1 medium sized purple onion

The juice of two limes

SALT, guacamole is no good without salt

half a cup or so of cilantro

this makes a large bowl, maybe 4, or 5 cups, so feel free to scale down but my husband and I both love it on everything and I am early out of my surgery so adding guacamole to foods makes it more smooth and easier to eat. Lovely on a scrambled egg. I even put it in tomato Soup, as weird as that sounds its good.

Of course we all know there is some fat in avocados so don't eat a mountain of it.

I make it the same way but with cilantro and a little bit of garlic powder. I love guacamole!

YES! I forgot to type cilantro, cant have guac without that!

That's the first thing I'm eating when I get to puréed/soft food stage!! And I can't wait! Lol! 2 more weeks. And ps...if you haven't been to south Texas' date=' you haven't had good Mexican food. ;) I could live off of it.....which is why I am now sleeved. Lol! :)[/quote']

Lol I'm from South Texas known as the Valley. .and I was sleeved because of the Mexican food here.

its dangerously good. Just be careful, its easy to eat too much because the avocado just kinda slides down (for me, anyway)

Mexican food ANYWHERE IN TEXAS!!!! East to west, north to south and everywhere in between. We've cornered the market on Mexican food, AKA TexMex round these parts! ;)

Mexican, Tex Mex I've always liked it but since being sleeved I like it even more.

It's like because I can only eat a small amount, I want something with flavour that will punch me in the face!

In other news I've never understood why you guys call coriander cilantro !! :P :P

here in kansas we don't have a lot of good mexican food.

What part of Kansas do you live in? We have several good Mexican joints in the Topeka and Lawrence areas! And being part Mexican, I am hard to impress! Ha ha ha.

Go to Lawrence hit burrito king at 130 am when it's busy and everything is fresh. We sleevers could eat 5 or 6 times off one . Even pre sleeve it was hard to finish one. Authentic tamales and chilies rolleno.

Besides Burrito King, try Tapas on Main St. It is so good! My friend opened it about 6 mon ago!

Just added some to my tuna to help it get down.... Sadly, my NUT says that avocado is one of those 'once a week foods'
