A little Greek...

Made this last night and it was really yummy:

1 chicken breast, diced

3 mini bell peppers (1 yellow, 1 orange, 1 red)

1 small zucchini, deseeded and diced

4 large mushrooms, diced

Light Greek Vinaigrette

Feta cheese

1/2 Avocado

Olive Oil (I just use a mister)

Cook the chicken through on med heat, then turn the heat up to high and add the veggies to stir fry. Once everything is browned to your liking, add 2-3 TBS of the Greek Vinaigrette, let it cook down a little (but not too much, you want your food moist!). And 1-2 TBS feta cheese. Turn off the heat and let the feta melt for a minute. Throw on 1/2 a diced avocado at the end.

This was so good and yields 4-6 servings (depending on what stage you're at).

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
