Suggestions For Cooking With A Mini Crock-Pot

My Nutritionist said that it would be a good idea to cook individual meals in something like a mini crock-pot especially when it comes to making your meat as soft and tender as possible. I think this is a good idea since I will be mainly cooking for myself once I get sleeved in January. So my question is this: Does anyone have any recipes for cooking with a mini crock-pot or even any great recipes that can become "mini-sized"? I LOVE chicken, so don't hesitate to throw that in the mix. All suggestions are greatly appreciated!

I make chicken cordon blue. Chicken breast or thigh, 1 can of cream of mushroom Soup, cut up provolone cheese and ham; cook on low for 6-8 hours. Soooo good

I got his from Pinterest. Gonna try to attach a screen shot of it. It gives you oven directions but can be adapted for a crock pot if you add chicken stock and let it simmer before adding the cheese.

If you have a regular sized crockpot already, have you considered making more than a few servings at a time and freezing the extra? My dad helped me with this right after I was sleeved. We made 3 meals, pureed them to get me through week 4, and froze them into ice cube trays. It gave me pre-measured amounts of high-protein and tasty foods (check out Eating Well AFter Weight Loss Surgery by Levine) that got me through the mushy stage like a champ. Check out the pot roast and chicken and mushroom Soup as well as the Chicken Beau Sejour recipes. So handy, especially if you are feeling a little fatigued with going back to work.

Omigosh I love the mini crock pot idea. I have a full sized one already. Love the ice cube tray idea...ingenious! I have a ton of cream Soups in the freezer already, but maybe I should take the time to thaw them & freeze into cubes before surgery.

i just got on Pinterest two months ago and i tell people that it's just a bad place! I get sucked in like nobody's business! but yes I have already tried several crock-pot recipes that people have pinned and they came out very well

So I haven't been sleeved yet so I don't know if any of these ingredients are a no-no, but this recipe is delicious....

I love chicken taco meat... chicken breast in crockpot.. mix one table spoon of taco seasoning (homemade so you can control the sodium content adjust flavor for personal taste and none of that nasty msg!) and a third of a cup of Water. pour over chicken breast. Cook about 8 hours on low. It's done when you can easily shred it up with a fork.

Here's my taco seasoning recipe. I make a huge batch and then just measure out what I need. This recipe makes a big batch of seasoning:

heaping 1/4 cup chili powder (I like to use the DARK chili powder it has more interesting flavor)

1 or 2 T garlic powder

1T onion powder

2 or 3T spanish paprika

1 T oregano

2T dry cilantro

1t coriander (optional) (not the same as cilantro, this is the SEED and has different taste than cilantro)

2 or 3 T cumin

2T black pepper

1 or 2 T sea salt

cayenne pepper to taste. (I don't use any)

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
