Ok don't pity me, enlighten me! What is a refrito?

Inquiring minds need to know! :D

Google is your friend. The name is based on a mistranslation: in Mexican Spanish, the prefix re is an informal form of emphasis meaning "very" or "well", which has been confused with the English re, which more often indicates repetition. Thus, frijoles refritos really means "well-fried beans", not "refried beans". In this dish, the Beans are often fried, but may also be baked, thus making the term "refried" a misnomer on two counts.[1]

This is one of those things that I learned from cooking with my mother, so anything it won't make a ton of sense.

Take a mess of dried pinto Beans and soak them over night.

The next day, take a chunk of salt pork and a lot of garlic and put them in with the beans, cover them with Water and boil and boil and boil until the beans are soft, then remove the salt pork and mash 30% of the beans. Top with cheese and enjoy.

Your making me homesick. My dad made them with the whole spread of Mexican food. I won't go into detail people might kill me. When I make them they just don't seem to taste as good as they did when I was growing up. I think he left out a secret ingredient when he showed me how. :) But things always taste better to me when other people cook it. :D

Despite being Anglo by heritage, I grew up in Southern California, and Mexican food has always had a central role in our family. One for my earliest memories was of the kids sitting around the fireplace with long forks roasting green peppers so that Mom would make Chile Rellenos.

I changed my profile image to a molecule of protein. Why? Because I am certain that it saved my life.

Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?
      Thanks

Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
