What to bring to a potluck

Having a pitch in/potluck at work tomorrow. I looked at the list of what everyone is bringing. Everything is either carb heavy or junk. So, in essence nothing I can eat. I need to sign up to bring something but I want it to be something I can eat. I'm almost 4 months out so I'm not limited by diet just by my sleeve itself.

Any suggestions? My sleeve does not care for lunch meat or beef products so those are out.

How about turkey meatballs in marinara sauce??

I like your idea. Didn't think of that.

Turkey or chicken chili might work too. I definitely can't do beef chili.

White chicken crockpot chilli.

Dump in crockpot:

2 lb Boneless skinless breasts and thighs

Can White canelli Beans

Large can of diced Ortega chillis

2 cans chicken broth

A chopped onion

1-2 T chilli powder

If you like spicy add white pepper

Cook in crockpot high 4 hrs or low 6 hrs

If needed take two forks and pull apart chicken that hasn't shredded on it's own

Serve with chopped green onions, sour cream or yougert and shredded cheese

A spiral sliced ham would work but it could be pricey. How about a Breakfast cass with eggs cheese and sausage or a crustless quiche. For a dessert you could bring some of those disposable champagne glasses, a carton of greek vanilla yogurt, berries and high Protein granola and let folks make their own yogurt parfaits. Lots of people might appreciate a figure friendly dessert.

Well the potluck went well. The turkey meatballs were really good. I'm going to start getting them for at home. Someone did think to bring some fruit. So I ate meatballs and fruit. Very yummy.

Do you mind if we change the title of this "What to bring to a potluck" and start adding other ideas as well? I have a feeling this could be really helpful. Here are a few I thought of:

1. A cold cut and cheese platter

2. 7-layer dip (you can make it healthier than you think) or bean dip, with those pop chips or pita toast or something (you don't have to have much of the bread if you don't want to)

3. Three-bean or seven-bean salad, though this might work better in the summer

4. Deviled eggs -- you can find recipes that use other things than mayo. My tip for deviled eggs is buy the eggs at least two weeks before the event. Older eggs are easier to peel.

Spinach artichoke dip in a crock pot:

1 bag frozen spinach

1-2 jars marinated artichoke

1 container Greek yogurt

1 8 oz cream cheese

1/2 c asiago or Parmesan

Use fennel or red peppers as chips. Or just chips.

Shrimp w/cocktail sauce. $7 at Walmart.

Cocktail weenies and/or meatballs in BBQ Sauce. Somebody made it with grape jelly& ketchup as a sauce & it was oddly one of the most delicious things I ever had.

Pinwheels: low carb tortilla, spread laughing cow any flavor, bacon bits, tomato& deli meat, optional pickles then roll up & slice.

Crack dip/Rotel dip ( my fave, kinda high calorie): block of velveeta, Rotel, & hamburger or ground turkey. I add chopped jalapeño. W/chips.

Mm I love my crockpot. I'm a potluck vet. Have one once a week at a work.

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
