Cilantro Lime Shrimp

Made this tonight - absolutely loved it. (My six year old doesn't care for shrimp so it made dinner for me and five other 3-4 ounce servings).

125 calories, 5g. fat, 5 carbs, 12 grams Protein per serving (when recipe is portioned to 6 pouch size servings)

Cilantro Lime Shrimp

Prep Time: 15 | Cook Time: 15 | Servings: SERVES 6 | Difficulty: Easy

1 T. butter

1 T. olive oil

2 cloves garlic, minced

1 medium onion, chopped

1 jalapeno, finely chopped

¼ tsp. red pepper flakes

½ tsp. Mexican oregano

2 roma tomatoes, chopped

1 lime, zest and juice

½ tsp. salt

½ tsp. black pepper

1 pound shrimp, split and deveined

2 T. chopped cilantro

Melt the butter and oil in a heavy skillet over medium-high heat. Add the garlic, onion and jalapeno. Cook, stirring until the onion begins to wilt, approximately 3 minutes. Add the red pepper flakes and oregano. Continue cooking until the onion becomes translucent, approximately 3 additional minutes.

Add the tomatoes. Cook, stirring occasionally, until the tomatoes are soft. Add the shrimp, zest and lime juice, salt and black pepper. Cook until the shrimp are just opaque. Be careful not to overcook. Remove the pan from the heat and stir in the cilantro.

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
