I make this alot and its really good. Instead of store bought sauce I make my own so I know whats in it. Very simple.

1 small can Tomato paste

1 tomato paste can of Water

couple tablespoons chooped onions (food processor)

and your choice of spices, I use garlic, basil and oregano

mix it all in a food processor.

It is low fat and low carb and tastes better then jarred stuff

Hello! I came across this site the other day when I was trying to find some new recipe ideas. I made this last night and it was sooo good! I added a grated zucchini into the mix. Thanks for sharing this delicious-ness!

I LIVED on this in my pureed stage.....loved it!! It is soooo good! Now, later on, I add italian sausage or ground beef for even more protein/substance....it's from www.theworldaccordingtoeggface.com. WONDERFUL website for recipes!!

Have any of you tried to freeze any of the leftovers? I was wondering if the ricotta freezes well...

As for freezing it, I believe that Michele (EggFace) has frozen it with success. I don't freeze it when I make it, mostly because this is a really versatile recipe and it keeps well in the fridge. I'm making it as my covered dish for a block party this weekend. I've taken it to family gatherings and friend's houses and everyone raves about it. No one even misses the pasta!

You can also do this in mini muffin pans and use it like hors douvres (don't laugh at my spelling please!), or wrap up the extras to eat later. If you have others in the house, I bet you don't get to eat the leftovers, though!

Shelly's Baked Ricotta

8 oz of Ricotta cheese

1/2 cup grated Parmesan

1 large Egg, beaten

1 teaspoon Italian Seasoning

salt & pepper to taste

1/2 cup Marinara Sauce

1/2 cup shredded Mozzarella cheese

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave[/quote']

I hate it, and b. it's just me and cooking for one can be difficult. But I'm trying to cook more. :) And I teach pre-k, so I have no idea how to spell big words and I can't count past 20. ;-)

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
