spaghetti squash?

Hi Everyone!

I just tried My first spaghetti squash this weekend ( well... my weekend LOL ) and I loved it! I made a Lasgana type dish- and it was really good!

Long story short- my computer bit the dust Tuesday- so I hooked up my old one and its awful- and I can't post the recipe- but when I get things sorted out I will.

It's not something I would have all the time- but I did like it and I found a few more recipes for it.

I also found some of the dremfield at kroger... gonna give it a whirl too!

It's been almost 3 years since y'all have posted on this thread. Do y'all have any new recipes or hints for us newbies? I'm 3 weeks out from surgery.

I put mine whole in the microwave until tender, then cut in half, scoop out seeds, then scrape sides with a fork. Super easy!

Spaghetti Squash Au Gratin

Serves 6

1 medium spaghetti squash

2 tablespoons butter

1 small yellow onion, cut in half and very thinly sliced

¼ teaspoon red pepper flakes, or more if you like it spicy

1 teaspoon fresh thyme

½ cup sour cream

½ cup shredded cheddar cheese

Cut the spaghetti squash in half and remove the seeds. Place in a covered dish with a ¼ inch of Water and microwave for 10 -12 minutes. In a medium sized skillet over medium heat, add the butter, onions, red pepper and thyme and cook until the onions are slightly brown in color. Salt and pepper to taste.

Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well. Transfer the mixture to a buttered baking dish and top with remaining cheese.

Place into a 375º for 15 – 20 minutes until golden brown on top.

Cheesey macaroni & Squash

Ingredients

6 oz. extra lean ground turkey

1/2c onion, chopped

2 oz Velveeta Light

1 cup uncooked whole wheat macaroni

1 spaghetti squash

Salt & pepper

Nutritional Info

Fat: 5.3g

Carbohydrates: 45.4g

Calories:337.9

Protein: 31.2g

Cook macaroni per package directions. Drain and set aside.

While the Pasta is cooking, prick your squash a few times and pop it in the microwave. Cook on high 15 minutes or until tender.

Meanwhile, cook turkey and onions in a large skillet over medium high heat until the onions are clear and the meat is browned. Drain fat. Return to the skillet and reduce heat to medium. Add Pasta and cheese and stir well.

Scrape 1/2 of the spaghetti squash (or desired amount) onto each plate. Top with 1/2 of the pasta mixture, then salt and pepper to taste. Serve hot!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

      Iʻm roughly 6 weeks post-op this morning and have begun to feel like a normal human, with a normal human body again. I started introducing solid foods and pill forms of medications/supplements a couple of weeks ago and it's really amazing to eat meals with my family again, despite the fact that my portions are so much smaller than theirs. 
      I live on the island of Oʻahu and spend a lot of time in the water- for exercise, for play,  and for spiritual & mental health. The day I had my month out appointment with my surgeon, I packed all my gear in my truck, anticipating his permission to get back in the ocean. The minute I walked out of that hospital I drove straight to the shore and got in that water. Hallelujah! My appointment was at 10 am. I didn't get home until after 5 pm. 
      I'm down 31 pounds since the day of surgery and 47 since my pre-op diet began, with that typical week long stall occurring at three weeks. I'm really starting to see some changes lately- some of my clothing is too big, some fits again. The most drastic changes I notice however are in my face. I've also noticed my endurance and flexibility increasing. I was really starting to be held up physically, and I'm so grateful that I'm seeing that turn around in such short order. 
      My general disposition lately is hopeful and motivated. The only thing that bugs me on a daily basis still is the way those supplements make my house smell. So stink! But I just bought a smell proof bag online that other people use to put their pot in. My house doesn't stink anymore.
