Help! I Need A Dish For Family Reunion This Weekend.

I had lap band 4 months ago, so far so good, but these get togethers scare me. I am bringing a piece of chicken breast for me to grill, but I need a side dish that I can bring for everyone, but something I can eat to. I know with the way his family cooks, there is no way I will be able to eat anything they bring. Gotta luv Southern cookin:(

Does anyone have any ideas? I used to bring a veggie pasta dish, but now I'm suppose to lay off the pasta, so it seems my options are kinda limited. Any recipes would be great. Thanks :)

Im not very familiar with the full diet required, but I would imagine Beans would be allowed in small portions. What about a bean salad? http://www.skinnytaste.com/2009/06/southwestern-black-bean-sa

  • I had to take a dish to a party last week, I wanted to be sure there was something there I could eat. I took baked beans and deviled eggs.

Thanks everyone:) The reunion was fun. I decided on making a cold bean salad. My husband was nervous, because his family is so picky, but they loved it. I used the organic bean mix at Krogers, a can

You could also do a leafy green salad: romaine lettuce (not iceberg), spring mix (arugula, baby spinache, frisee', etc), a little red onion, some black olives, a few grape tomatoes, maybe a few banana peppers. Top with fat free Mediterranean dressing and some grated parmesan or crumbled feta (or both). mmmm!

This is the PERFECT time of year for a delicious (and healthy) Fruit tray!

Or you could do a raw veggie tray with fat free ranch to dip in. Hidden Valley's fat free ranch is delicious, I can't even tell it's fat free it's so good.

Sugar Free cookies...chocolate chip. Splenda has the recipe. Or if you can eat berries...those little dark chocolate cups with berries are yummy.

How about a "lite" zeggie pizza? Lite crescent rolls laid flat together and baked, mix lite ranch and lite cream cheese for the sauce, lots of fresh veggies and 2% cheese on top.

Or a "lite" fruit pizza. Lite crescent rolls laid flat together and baked, lite cream cheese, lite or fat free cool whip mixed together for the sauce and lots of fresh fruit.

Probably couldn't eat a lot of it band wise, but could share ;) Veggie would be better.

I took baked beans and deviled eggs.

Quinoa. If you lke it.

Look up Rachel ray's recipe for orzo and chick pea and replace quinoa for the orzo delicious. It goes far

A roasted vegetable salad is easy and very tasty. Cube your favorite vegetables - sweet potato, beetroot, pumpkin, onion, garlic etc, toss in olive oil, roast til tender, add balsamic vinegar. Yummy!

Could you bring veggies to grill? Some squashes, eggplant, onions. Brush with olive oil and grill. I dont know anything about the diet needed to be followed so i'm just throwing this out there

Bean salad is soooo good! Everyone will love it!

I like to make a fruit dish with fresh pineapple, sliced strawberries, sliced watermelon, and blueberries. Mix it all together and it is delicious!

Thanks everyone:) The reunion was fun. I decided on making a cold bean salad. My husband was nervous, because his family is so picky, but they loved it.

I used the organic bean mix at Krogers, a can of garbonzo beans, corn, mild salsa, a can of crushed tomatoes with green chilis for a touch of spice and sprinkled the top with sharp cheddar cheese. MMMMMM :) Everyone was really suprised on how much I have lost since we all got together at last years reunion, that felt really good. Then my husband and I hiked a new trail the next day and found the most beautiful waterfall. Next time, we are packing a lunch and swimsuit & going back to the falls:)
