Easy Shepherd's Pie

I modified this recipe for us lapbanders. It is often difficult to get my veggies in so this recipe helps with that!

I made one packet of instant mashed potatoes according to package instructions. Next, I cooked a head of cauliflower until soft. Put it in the food processor with salt, pepper, and two ounces of low fat cream cheese. Blend until creamy and mix with the instant mashed potatoes. Set aside.

Next, I ran 1 lb ground beef through the food processer--just to break it up a little more. Brown the ground beef and add 1/2 cup chopped onion.

In food processer, purree one can mixed veggies.

Once beef is browned, add mixed veggie puree, garlic powder, and one can cream of mushroom Soup.

Spread beef/soup mixture in 8X8 baking dish. Spread cauliflower/potatoes on top. Top with 1 cup shredded low fat cheddar cheese.

Bake at 350 degrees for 30 minutes.

i have yet to try the cauliflower mashed idea....will have to do it when hubby is gone at work. just dont think i could slip that one by on him.

for our shepard's pie also use Tomato Soup. i bet it would be good with this version too.

I have been adding califlower to husbands potatoes for years. If you tell him...then he will hate it...but if he asks whats wrong...tell him it is probably the Soup or the fact that you have to make it loose ...works lol

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
