Meal Prep Sunday

Now that I have been cleared to eat basically whatever. I have started meal prepping to make my life easier. Today I am making

Spaghetti Squash casserole

Cod with a white wine Tomato basil sauce

Breakfast Egg Cups

Here are some pictures.. I’ll post the cod once it’s done!

Those look so delicious. I'm only 5 days out so still have a long way to go before I get to eat real food like that.

Spaghetti Squash

Half de-seed and roast squash facedown on cookie sheet. ( before roasting spread olive oil salt ,pepper , garlic powder and onion powder inside)
400 degrees for 40 minutes

Scrape out “spaghetti” and transfer to a bowl

Add in ricotta shredded parmesan and 1 egg to spaghetti (salt and pepper to taste) sorry I don’t have measurements I’m an eyeball cooker but I think I put about a half cup or ricotta and 1/3 cup parm

Spray casserole dish with non stick spray

Put spaghetti mixture in casserole dish and smooth out.

Cover with about a cup to a cup and a half of Tomato sauce

Finally layer mozzarella on top

Bake at 350 for 15-20 minutes or until cheese is browned

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
