Mozzarella stuffed meatballs

tried a new recipe tonight and it was so yummy and so far, easy on the stomach. Just moving on to soft foods and this is the first thing I made. I like it because my husband and I are finally being able to eat the same thing. Feels good to be able to make just one meal.

Recipe:

2 lbs 93% lean ground beef

1/2 cup Parmesan cheese (grated)

1 cup Panko breadcrumbs

2 eggs

1/2 cup fairlife milk

1 - 2 tbsp Italian seasoning (to taste)

Garlic (to taste)

8 oz. mozzarella cheese cut into cubes (put in freezer for 20 minutes prior to making)

Mix first 7 ingredients well and form into balls surrounding cheese cube. Bake at 375 degrees for 40 minutes. Serve with marinara sauce. Makes 17 meatballs. Each one has 150 calories, 16 grams Protein and 3 carbs.

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
